Slightly off topic, I remember my grandfather had a barn that was made of a mix of cobblestone and wood. The walls on the ground level were made from cobblestone, while the rest of the construction was wood. It looked really nice.
Yea I love using cobblestone like that. Especially if your building is dug into the side of a hill or something. Then it makes quite a lot of sense.
In vanilla I absolutely cannot stand cobblestone. It appears so little naturally I find it to be an eyesore compared to the rest of the landscape.
I'm contemplating a texture pack, but I started playing only around a month or two ago and I'm obsessed with keeping it "pure" for the time being. Heh.

My main base is, purely for aesthetic reasons, made of smoothstone. All of my other structures, due to laziness (and in the case of my nether house, durability) are made of cobblestone.
I guess I like the overall look of smoothstone better, however cobblestone is a lot easier to access, because you need all the cobblestone + 8 more cobble + a fuel for the furnace.
Or, I guess all you need is INVedit for smoothstone. xD
I'd say cobble as long as you throw in like some wood flooring or something. Too much cobble and my eyes just can't focus, but if I had to make something out of only smoothstone/cobblestone I'd say smoothstone.
Smoothstone. It looks more...professional. Cleaner, and with more effort. But I use cobblestone because I don't have nearly as much things to smelt the stone with.
The one time I used smooth stone for any major project was on my third minecart line. I used a lot of coal not only to smelt all the cobblestone, but also to smelt all the sand into glass. I find using smooth stone to be a waste of coal that would better be used elsewhere.
Cobblestone doesn't look too bad with the Mixcraft HD texture pack, which is the one I'm using.

It's easier to access, and I always prefer my house to look like I built it, rather than looking like I carved it out of a mountain.

TNT against a smooth stone wall will blow a 7 meter wide hole. TNT next to a cobblestone wall will only blow a 5 meter wide hole.

Some people say cobblestone is completely ugly, but it definitly has its uses. Like castles and floors.
Cobble isn't nearly as bad with texture packs.
