Let me just get straight to the point, jack'o'lanterns need to be weakened, and here's how:
1. Make crafting it take 3 torches and not 1
2. Decrease the amount of light they give to the amount of light torch gives or less
The main reason for this is that it will make it more useful to get glowstone, since without these changes jack'o'lanterns are way too easy to get, especially for people that have played on a world for a long time. Don't beileve me? Here is an example.
My sister has been playing on a world for a long time, and she basically has a full stack of full stacks of coal. She also has a pumpkin farm. Since trees are easy to get, she has the three main things right there, and she can light up an entire mansion because of this. Think about it like this:
Would you rather...
1. Have 1 easy-to-get resource, 1 that is hard to get, but renewable, and one that's easy to get AND is renewable, and use all of those to get a main source of light?
or...
2. Get every type of tool, create a portal, endanger your items by getting something really high up to mine a block, having it not even give you all the resources to make the block, then getting out to make them before you get killed by white squids of death, just to get something that gives the same amount of light?
It's kind of obvious. That's why the jack'o'lanterns should not give as much light as they do.

glowstone and jack o lanterns are just decorative lighting items, your sister could as well light up a mansion with torches too, glowstone looks better and is also used to make potions, thats why it is rarer than harder than jack'o lanterns, it is not just the lighting factor the one to be taken in count, but the asthetics... quartz is also rarer than most building blocks, but that doesn't mean it needs to be explosion proof or not get destroyed in lava or anything else, it is just a decorative block after all.
Here are things I want to say (note: when I say Pumpkins, I mean Jack-o-Lanterns):
1. You said that it will be easy to light up whole house because Pumpkis are easy to get. Do you not know that you can simply place torches?
2. Glowstone looks nice. Pumpkins look ugly Glowstone is better to use for decorative purpose.
3. Glowstone can be crafted to Redstone Lamps which is useful as turn-on/off switch for some mob systems, etc. Glowstone is also used for potions (Glowstone Dust). And you seem to complain bout Glowstone not dropping enough Dust to make the block when you could have used a Silk Touch tool.
4. Increasing the Pumpkins cost of Torch by two doesn't make a difference. People have more Coal (in fact I only use Coal for torches, I use Blaze Rods for smelting) than they need and Wood is easy to farm and people can get more Torches.
5. Decreasing the light level for Pumpkins would cause trouble. If you lit up a cave/your house with Pumpkins, then chances are mobs would then spawn in your house/cave because the light level got lowered. Some people lit up houses just barely above the light level you need for mobs to spawn (in my house, some areas are just light level 8 and I use hidden Pumpkins, if Pumpkins light level get lowered, mobs would spawn in my house.
Another thing, you want Pumpkins to decrease the amount of light they give to even lower than a Torch. Now, why would people use Pumpkins anymore if that's the case? A Torch gives more light and Pumpkins need three Torches (by your suggestion). They're ugly anyway, almost nobody uses Pumpkins for decoration.
One thing to note, Glowstone IS renewable, it is a drop from Witches, so really, both are renewable, one is just more annoying to get and looks better, this topic has nothing of use to it.

after playing for any amount of time you can light up anything with torches. So it's actually more resource/time consuming to create jack o' lanterns.
Time consuming? You put a pumpkin in a crafting table with a torch. That doesn't take long.

But Torches give the exact same light level (or minus one light level depending how you look at it), and you need Torches to make Jack o Lanterns. Which means this change will make absolutely no difference as far as balance or making Glowstone a better lighting choice.
Glowstone may function as a light source, but it is also used for redstone controlled lighting and very useful for potions. Making one item worse to make another item seem better is just bad design, especially when the item you want to look better has plenty of useful funtions already.

But the thing is, Pumpkins doesn't even need to be nerfed. I have a whole post above explaining why I think they don't need to be nerfed. And you ignore my main point which is you have to re-light up all the caves if the Torches got nerfed (light level will be lowered, they might not supress mob spawning in caves and so you have to re-light up the caves).
And if you're wondering why you have to light up caves, it's for our mob systems. It is used widely by all players and nerfing Torches would most likely lead to those people complaining.

Well, I can't really spot sarcasm if I can't see the guy in person because I can't see his facial expression, hear the tone of his voice and the manner in which he said his words. It's hard to assume he is sarcastic or I might spark an argument from a misunderstanding though.

Jack o lanterns are okay, really.
Torches are SUPER easy to place. way simpler to light up some place using them thwn anything else, really.
Making X rarer that fits the same role as Y NEVER makes Y actually better. only by comparison. doesn't mean X needs to be nerfed.
Glowstone remains better than jack o simply because it looks better.
However, I agree it feels weird how a single torch inside a nearly-closed "pumpkin box" gives MORE light than a straight torch.
Personally, I would leave it at 1 torch and make the jack o give a LITTLE bit less light, say level 12 instead of 15. No need for any worse nerfing than that.
Everything in minecraft grows SUPER fast. Try making say a simple house build, unless it is ridiculously tiny but the time you've finished most of everything will have grown fully even the tree in your tree farm.
Also, "away time doing other stuff" doesn't count even half (or a tenth) as much as "need to click stuff time".
Personally, farming would be changed a LOT :
- Minecraft day-night cycle = 1 hour (instead of 20 minutes).
- Double the usual number of growth stages.
- Hoe (or maybe other tools) always required to do farming stuff.
- Weeds that you need to shear otherwise you end up losing a good deal of your crops to let's say weeds.
- Soil, a new block, which is like a darker kind of dirt. Dirt is everywhere, Soil is much rarer, in small patches. Dirt Farmland and Soil Farmland would have very different growing capabilities.
Current way makes food SO EASY to get in incredible amounts it is almost ridiculous.
Anyway back on topic, Jack O's don't really need the nerfing. Too minor of a point really.

I'm not really seeing your point to this. Jack o' lanterns are a decorative block. Use them if you want don't if you don't want to.
