So here's my Rhea idea, because Ostriches are boring.
Why do we need a new mount?: Apart from adding a flying mount (would love to see it, but doubt it will ever happen, since apparently tedious exploration and difficulty building aerial structures in survival mode is a "game feature"), there doesn't seem to be much of a niche for another mount, since Horses have it covered. Then I thought "Well, Horses stink at jumping, climbing, or getting around rivers". So what if we had a Rhea mount, that could do that stuff, at the penalty of going significantly slower than a Horse? Horses could then be your speedy mount for fast travel over flat terrain, while Rheas could be your mount for mountainous, steep, difficult terrain, but wouldn't be your choice for long-distance travel.
Ok, let's hear some details: Rheas don't fly, and don't run all that fast (maybe sprint speed? I'm not too sure about how that compares to Horses...the point is, faster than walking, but not as fast as a Horse, whatever speed that would be), but they do have some unique skills. First, with their powerful legs, Rheas are excellent jumpers. Their jump bar charges much faster than a Horse, and decays far slower. Their maximum jump height is also almost twice that of a Horse, up to six or seven blocks - great for climbing mountains or getting on top of trees.
Their second "ability" that distinguishes them from Horses is that, like Chickens, Rheas fall slowly. If you are riding a Rhea, you have a parachute/glider of sorts. This lets you go up to the top of mountains and jump down, slowly falling over a long distance, or run on terrain that has big falls without fear of death by falling.
Finally, unlike Horses, Rheas can run across water, but only if you have a Carrot on a Stick equipped, and only if you right click the carrot on the Rhea, and only for a bit of time before needing a recharge, and doing so uses up a portion of the Carrot on a Stick's durability. We don't want this ability to get too crazy.
Like Chickens, Rheas hatch from eggs - let's call them Big Eggs to distinguish them from Chicken eggs. This makes them easily transportable if you want to move somewhere else.
How do I get one?: Rheas appear on grasslands, savannah, and in deserts (being a bit hardier than Horses). Their lure/breeding food is Golden Apples (Apples because wild ones eat berries and fruits, and the idea is they got so good at jumping because they pluck apples out of trees...yeah...). I figured making it require a golden apple makes the mob just a bit harder to lure/breed, which they should be. Like Horses, you can only ride a Rhea if you put a saddle on it. You can also hatch a Rhea from a Big Egg, if you find some.
What do they drop?: Originally I thought that since the real birds provide leather, meat, and feathers, that should be the case in Minecraft...but that is just too much. Instead, I think having them drop a few feathers is probably the fairest option - that way chickens remain the "optimal" source of feathers since they also provide meat. They also lay Big Eggs, so there's that to look forward to.
Any different breeds?: I think it would be neat to have a few varieties for collectors to gather, maybe something like a "normal" brownish-colored one, one that is striped like the chicks in the picture, and some goofier ones like an all yellow one (as a Big Bird shoutout) and a rare albino version that is white or pink.
Any final thoughts?: That about covers it, although I'd like to add one final idea. As a Minecraft "in-joke", maybe give the Minecraft version of a Rhea a larger beak than the real version, so that players are endlessly forced to argue over whether it is a Rhea or a Gastornis.

They don't lay Big Eggs out in the wild for you to pick up, either, but sometimes you can find a Big Egg in a chest.

Overall the idea seems pretty balanced. The only gripe I have is the breeding and water traversal. 18 ingots for something that is in a sense on-par with horses, either Golden Carrots or some alternative should be instead.
As for the water movement, slow wading should be fine. There's no need for running on the water using carrots.

Just for, you know, players not making huge farms of Rheas and having UNLIMITED amounts? Just an idea. Also, I think the Rheas should have only five seconds of water walking/swimming or whatever it is in water. Other then that, FULL SUPPORT. Oh and also, I actually hope this gets popular and does get added, it sounds like my type of mob, I go exploring a lot.
I clicked on this thread thinking "Oh no, it's just another boring horse ripoff" but it's actually pretty well thought-out. I too think that water walking is a bit overpowered, and they should just be able to swim. It would be nice to have a mount that can actually handle extreme hills, since most horses go quite fast and end up dying when they launch off a cliff, hehe. This idea has my support.

I want more mobs, as in: much more variety of mobs.
And I want less mobs, as in: less average mobs per chunk. There are so many mobs running around that exploring in MC often feels to me much more like some kind of theme park or zoo, rather than actually exploring a wilderness, you know? So many that after a while the mobs feel more like obstacles than anything else lol. I'd drop the average odds of friendly mob packs by at least 50% if not more.
The Rhea sounds cool but it might as well be a chocobo or whatever name too.
Remove running on water. Just allow them to swim slowly is sufficient.
The feather-falling is kind of both generous and annoying at the same time too. Generous, because you suddenly make the player totally immune to fall damage. Annoying, because now going down actually takes LONGER.
Those birds without riders would fall without damage, but when ridden maybe just a "somewhat" reduced fall speed, and lessened damage (and/or damage that after a few more blocks of falling distance).

I like it! This would be great for vanilla, so I can finally climb that mountain! First, Golden Apples to breed the Rheas seems unnecessary, maybe just normal apples. Second, the water walking ability should not be activated by a Carrot on a Stick. Maybe feeding it a Golden Carrot? Just a couple suggestions, I still fully support the idea!

One concern that I have is it might be hard to make a model for one of these. But other than that Support.
