Dammit, Why did I have to find your topic, instead of just starting my own?
I was pondering this just the other day, wondering what the other villager types could do, as technically none of them (apart from the farmer) actively carry out their jobs. So, here's a few ideas I had, feel free to add them to your own, if you like them:
Fisherman - This one is easy, once the player has traded string with the villager, it is able to locate suitable bodies of water within say, 30 blocks and will spend the daytime gathering fish to add to the villages store of food.
Shepherd (Yes, this one seems very complicated) - Go tame a Wolf, then using a Lead, or some other way of telling the game the Wolf now belongs to the Shepherd; give the Wolf to the Shepherd. The Shepherd will now use the Wolf to round up nearby (30 blocks) sheep into an enclosure. The player would probably need to build the enclosure too, and maybe this would finally get Villagers using fence gates...
Fletcher (Okay, this one is a stretch, and maybe should just come under Archer instead) - If these guys can make Bows and Arrows, why not have a shot at firing them? Villagers already come with basic watchtowers (the ones with fences on top), so why not have them as guard posts so the villagers can support the Golems at night?
Cleric - Could be able to Heal/Regen other villagers and Golems, and possible provide buffs to nearby Golems at night.

see now, this is plain ridiculous, iron farms are not a supported mechanic, they are abusing mechanics to work, it's pretty clear that the whole idea with iron golems spawning was that villagers are meant to be building them, yet the golems are spawned a distance from them while in tiny containers.
no, the hunger mechanic would be perfect as actual hunger, iron farms are no excuse, they are an unbalanced abuse of game mechanics.
as for the idea, no support, most of the idea is pointless or greifing the players non-renewable resources.
With the new patches, iron farms are perfectly balanced. I do very large redstone contraptions and I need a constant flow of iron and mining isn't enough. My current iron farm can make around a stack every hour. That is far less than what you could obtain from mining. Large iron farms no longer work. I understand that some people don't like the aspect of the game involving automation, but these farms don't build themselves. It took me a ton of iron to build rails to transport villagers, obtain hoppers, build trapped chests etc. Your view is very unfair criticism. As far as our idea, I'm glad to see what people are disagreeing with, and we can work with that.

It'd be much simpler to have a naturally spawning pen with sheep and they would shear and breed the sheep

No, this basically a villager warrior, iron golems are for that

I think thats an really great idea but it might be hard to fix new bugs with this like if the village gets destroyed the miner griefs the whole world and how would you load village chunks? But all in all its an good idea

the miner would not grief the world, it would only mine on levels 10-16 in the village boundaries
Support. I have suspicions that Mojang may be working toward this anyway.
I second the fletchers supporting the Golems with bows. It differs from village warriors, in that Iron Golems can't attack from a distance.
It would be cool if the miners gathered coal and iron, then gave them to the blacksmith to make into ingots. He could then make iron blocks, and stack them into the "T" shape of the Iron Golem's body. I'm not saying to change the Iron Golem's current spawning mechanics, just to create the illusion that the villagers are actually making the Golems that spawn.
Maybe some of the villagers could gather wood too, and use the miner's coal to make torches. That way they could light up their area, to help protect themselves a bit more without making them warriors.

most of your ideas are already in this (two great minds think alike :)) and i guess if enough people support the fletchers i could add them and i agree about mojang. The reason i thought of this seriously was when they implemented the new villager ai in the new snapshot. I think theres 3 or 4 supporters now.

Had another idea. How about the Librarian acting as a teacher to the children? The children would gather in the library during the morning. They could then go outside around noon to chase each other around, with the Librarian watching over them. In the early evening, they would return to their homes.

I think Intelligent Villagers might be a good title. The Banner should show a couple villagers preforming actions appropriate to their professions. Maybe one swinging a pick, another placing a block on a half finished house.
Another couple suggestions:
The blacksmith should repair the Iron Golems, and doing so should consume iron ingots from his inventory. The Golems should make their way to the blacksmith's building in the morning, but only if necessary.
Adding to the shepherd idea, they could raise cows, pigs, donkeys, horses, and chickens as well.
A banker villager, with an iron bar vault to hold deposits. Maybe a villager occasionally tries to rob the bank, and is either killed, driven out of town, or put in jail. It should lower the village's respect for you if you raid this chest, and raise it if you put valuables in.

I like Better Villagers if you were to change it but in my opinion I think it's fine as it is.
