I know minecraft doesn't always follow reality, but you really shouldn't be finding coal in igneous rocks (andesite, diorite, granite). I would suggest no coal in these types of rock, but perhaps metal ores and diamond could be more common there.

But in this case, there's an opportunity to add variety to the game by having different ore concentrations in different types of rock. I'm not saying Minecraft has to stick to realism for realism's sake, but there are times when it can be used to make the game better. Like the recent addition of mutton from sheep.
Hmmm the idea is not too shabby. But i have seen this in many mods such as Attack Of The B-Team (Modpack actually =P, I don't remember the exact mod though).
Support, but only make ore naturally generate in stone (And derivatives like diorite) and dirt blocks, make any other blocks /give only, for decoration.

It has been said countless times that ores will generate naturally in stone variants. Other variants will be posible via commands or MCEdit.
Support, but like if you're mining a granite-styled iron ore, do you still need to use a pickaxe?
Yes, to get ores from blocks you will always need corresponding tool for that block, even if You can break that block normally by fist.
