Everyone else has pretty much been thinking along the same lines as I am about this idea. One of the thinks about these I like the most are the Death Caps (Does that sound wrong?). I just think that minecraft mushrooms need some danger. (As a ton of real-life mushrooms are known to be poisonous.)
I have an idea for this suggestion, how about you could feed mooshrooms different kinds of mushrooms to make it grow that mushroom on its back instead of the default red ones? Or maybe breeding them with mushrooms, which would make the offspring grow the kind of mushroom you fed the parents? The naturally spawned mooshrooms would still spawn with red mushrooms.

If you can't decide on the color of the new mushroom, why not have it have a variety of colors randomly, like 1 of them is neon aqua, but the next one you place is neon green.

could you make it so that you can actually place mushrooms? i have been playing for 4 years and still cannot make a mushroom farm (because idk how to place them)

The light level of the block you place them on must be low enough (perhaps 7 or below), or else you must place them on mycelium or podzol. Alternatively, you can place them anywhere in the Nether at any light level below 13.

back in the day there was only stone to place it on but that was really broken.
i never thought about podzol
There's also a trick to placing mushrooms during the day: dig a single block hole, put a water source block in it, and plant the mushroom there. That's a common way people make giant mushrooms--if you apply bone meal to it afterward you can grow your giant mushroom wherever and whenever you want!
