Currently, Minecraft has no overworld centered boss mob. That seems strange because the overworld is the world you spend the most time in. This boss, the Kraken, would spawn rarely when you swim over a Deep Oceans biome. For those of you who don't know what the Kraken is, it's a legendary giant octopus-squid-like creature, similar to a giant squid, except bigger and with 8 tentacles instead of 10, like a squid. It is said to live off the coast of Norway. The Kraken boss would have 50 hearts (It seems low, just keep reading), which is less than the other two bosses, The Ender Dragon (100 hearts), and the Wither (150 hearts), since it would likely be the first boss you would encounter. When first spawned, it would shoot up its tentacles and grab the player, pulling him/her under the water. The player then has to punch the tentacle holding it until the Kraken gets angry and tosses the player up through the water into the air, because the player most likely wouldn’t be able to swim to the surface before drowning. The Kraken would then emerge and attempt to eat the person alive with its huge gaping mouth. If you get bit at, you will take sufficient damage (About 3 full hearts) and the Kraken will submerge again to repeat the process. All this time, I forgot to mention, you should be attacking it furiously. What is so special about the Kraken that I forgot to mention is that the tentacles have separate health, and will disappear in the usual flash-red-and-vanish-in-a-cloud-of-smoke way, dropping 5-10 black ink behind. The tentacles have 5 hearts each, giving the tentacles an altogether 40 hearts. Plus the kraken’s body having 50, that equals a total of 90 hearts, still less than the Ender Dragon or the Wither. When killed, it drops 40 – 50 ink sacs and enough Xp to level you up to 50.
Note: I searched everywhere for Kraken Boss before posting this, so if someone already posted this, leave a comment with a link to one of those posts. Thanks.
A colossus would be more representative of the Overworld, I feel. Think about it. On one hand, a giant squid. On the other hand, a gargantuan beast raised from the earth and vegatation that characterizes the Overworld. If you wanted to get really in-depth, you could have his appearance be based on the biome he's summoned in.
Also, I couldn't resist.

“Patience up to a point. Know your time, but work your wyrd always.”
The girl goes inside of that one guy’s dream. They geton the plane with the guy they need to incept, and start dreaming. They capture him in the dream and interrogate him. The girl discovered that the one guy was stuck in limbo. The projections start coming after them. Asian Guy got shot. One guy’s projections of his kids keep getting in the way of the operation. They go into the second dream state, and the one guys tell Mr fisher that he is here to protect him in the dream. Fisher thinks that his right hand man is the one who kidnapped him. Write notes here: The music starts playing before they are finished with the third dream state, but the architect tells the one guy a shorter way out, but Maul may figue it out and sabatoge.
I do kind of wish there were more mob bosses, specifically some in the overworld. But I see what others see; being attacked while unprepared would be an issue. In order to make a boss mob, it would need to be somewhere they a player wouldn't stumble upon early on in the game. Others mentioned a colossus type boss mob, which I would like to see as well; however, given the size of oceans, it seems logical to me to have both an overworld boss on land and at sea.
