As a person who has built structures on Extreme Hills biomes, the new terrain generator brought up a problem:
All Extreme Hills moutains will be snow covered. No snow-free mountains.
Not that I don't like them, it's like an Alpine biome, pretty scenic, but I like having some tall and snow-free mountains too, especially when you have built something there and now you have to deal with the snowfall.
According to the bug tracker, snow in the Extreme Hills was marked as "Works As Intended" feature. See Bug MC-30501
If my memory serves me right, the idea was to have two variations of biomes, the old and the new. Then, if we are getting 4 kinds of Extreme Hills, why not keep the old one snow-free? Extreme Hill M and EH M+ could have snow caps.Why to have all 4 EHs with snow caps and little variation between them?
Please, keep the old one snow free, for variation and for sake of our existing structures there. One or two snowcapped mountain biomes are enough.
The major problems
1) if you have built a house or structure on an Extreme Hills biome prior to 1.7, you probably designed it with no snowfall in mind, now you'll have to deal with snowfalls and it might screw up your design. Especially those big castles, towers, bridges or houses we built on the mountains will be snow covered. Probably you'll be forced to move your structure or build up your own mountain in a snow-free biome (which I doubt).
(Test: I loaded a 1.4x world in the latests snapshot and saw it was having snowfall in my mountains.)
2) If you want to build a structure on an Extreme Hills biome, you'll need to keep in mind there will be snow. No snow-free mountain as option anymore.
You might say "have you seen a IRL mountain without snow?". My answer is:
1. In the new world gen, the snow-line is too low to force all mountains to be snowcapped for sake of realism.
2. Not all tall mountains are snowcapped in real life.
The idea:
Extreme Hills biome should be kept snow-free (for heritage), while Extreme Hills M and Extreme Hills M+ biomes could have snow caps.
I picked the classic Extreme Hill biome to keep it snow-free because this biome already exists since 1.0 (or since b1.8.1?) and people might have built structures on it.
I think we will need to have snow-free mountains too. I'm afraid that if this doesn't change we will no longer have snow-free mountains as an option.
A example of a prior-1.7 EH mountain with a tower that I and some friends were building in a survival server:

That is partially correct. Snow is now a range of heights based on the "temperature" of the biome. Things with a low temperature like Taiga have their minimum height for snow much lower than others, which is why it snows at sea level there. Deserts have high temperature so it can snow if you could build high enough, but that is talking thousands of blocks, way higher than you can get to in the current game.
Extreme Hills just have the unfortunate mix of being a temperate zone and having a high elevation.

In real life not all tall mountains have snowcaps. For example, mountains near the Equator line are less prone to have snowfall than those near the poles.
The thing is, the height limit is too low to give the sense of realism and force all mountains to be snowcapped. In some places the snow line is just 15 or 20 blocks higher than surroundings.
My main point: we need to have snow-free mountains as option.

Since there are Extreme Hills (and EH+) and Extreme Hills M (and EH M+), the first could be renamed to Highlands while Extreme Hills M would be Alpine. The Highland biome would be a little hotter than Alpine.
I support this. While I like the snow, I agree EH should stay as it was before while EH+ and EH M+ keeps the snow. This way everyone can have their mountain building experiance the way they want it.
Can you stop crying over it and be happy biomes are changing? I've encountered many many many warm extreme hills biomes with no snow on them. I suggest you look harder. No support on your idea.
Extreme hills are fine the way they are today. Would you want to see Mt. Everest, towering through the clouds, without a single speck of snow on its summit? I wouldn't. Also, you said that not EVERY mountain has snow on it. Still complaining? Go back to 1.6.x.
How about we alter extreme hills a bit, and put increase the number of variations to 13? there a re currently 4, Extreme hills, Extreme hills M, Extreme hills + and extreme hills M +. Now, we could Extreme me hills+ could have 3 versions: Cold which is how it is now, Snow -covered which increases spawn of spruce trees, and all is snow-covered, medium, which replaces some spruces, with oaks, and snow appears a bit higher up on the y at y=110. This variant would not have a hot version. reg. extreme hills would only have 2 versions: Cold, which is how it is now, and medium, with snow appearing at y=135. Extreme hills M would be what it is now as cold, snow covered, which is the same as it is currently but with snow everywhere. Medium would have snow appear at y=135. Hot version wouldn't have snow and grass would be a bout desert/savannah colored. The grass would appear only at the bottom, up it's pure stone. (A browner stone variant would be good for this, and minimal amount of gravel.) Extreme hills +M would be the same as with Extreme hills M, but with trees, and no hot version.

full support from me. My survival house is built by a mountain and it just hasn't been the same since its now snow capped.
I wish they would make it so it wouldn't snow on old mountain biomes and add new snowy ones or something
I'm looking for something like this. What I suggest though is maybe make the height at which snow occurs higher (because it also depends on the height and not just biome). Extreme Hills used to be beautiful but now I try to avoid them because they're just so ugly. I also think that the exposed stone on the surface of the Extreme Hills is very ugly. It used to be Grass with only the Stone showing in the sides and not on the surface itself.

This is subjective and depends on the case: if you have built a hi-tech glass dome on top of EH mountain, your building is definitely ruined.

As to my building, I'd be forced to clean out the snow from the gardens, yards, trees and pathways every time it snows.

PS: a bit off topic but I think the amount of exposed stone and gravel in the updated extreme hills should be toned down a bit. Just my opinion.
