Netherrack doesn't look pink in the nether, as the light levels make it look dark. It has a pink hue in high light levels because it's supposed to be "flesh-like". If they darkened the texture, it would have too little contrast compared to the nether's red glow.
And no offense, but the textures you made are kind of sloppy, they don't have much of a pattern, and don't have any texture.

Netherrack is a solidified pile of guts. There was a similar matter in DOOM, and it's a frequent occurence in hell-like (demonic) places. Now if you search for images of guts, you'll see that they are of that dark red-pink tone.
The problem is that you didn't realise in-game that netherrack is flesh, which has another cause : neterrack has a flesh texture, but acts like stone.
I think changing the sounds to more fleshy ones will dissipate that impression of walking on candy you get. So this is my suggestion.
That's what came to my mind while writing this. For now you see netherrack as what it is only if you're used to gore games, which makes it suitable for eveyone. Making the netherrack more suggestive could make the nether non-suitable for some players.

Netherack doesn't look nice, and sweet. Yes, it's pink, but barely. And nice and sweet would be hot pink and rainbows. If you're in a world filled with fire and lava. Netherack looks anything but nice and sweet. And if you want it so bad, just make a texture pack. Seriously. No Support.
I definitely am not a fan of the first picture. A nice thing about every Minecraft texture is that they all blend with one another, without causing too much of an eyesore. However, if something like that first picture were added, then in a realm where the same block is EVERYWHERE, it is going to look really bad, because you're always going to perceive those two odd dark red spots in the same exact place.
The default netherrack blends well with all the rest of the netherrack blocks, because none of the textures inside are overly huge and eye-catching.
If you don't get what I mean, build a long wall of cobblestone, and just look down the side of the wall. You're going to see a big chunk of stone in the texture, repeated over and over.
The first texture appears extremely grid-like, so I oppose that. The darkened version of netherrack looks amazing. When I loaded the new texture up, it impressed me. I always disliked the current netherrack texture anyways. As for the quartz ore, I like the proposed one. It looks way better, but I would add a second texture for the quartz ore, with the darkened netherrack in the background instead.

Most people play with the highest brightness setting when they are in the nether, and it looks horrible currently. I'll gladly accept the darker version of the netherrack.

Yeah I agree that the netherrack texture could use some sort of revamp. The current texture is a total mess. It could use a little more contrast to highlight the fact that it's stone because I had no idea that it was a recolor of the cobblestone texture until I saw a higher definition version of the default texture pack. I don't know if I like the OP's texture but I do definitely support retexturing netherrack.

To those of you suggesting new uses for Emeralds in the suggestions forum: Emeralds have enough uses. You can trade with villagers to get diamond armor/tools/weapons and enchants. Stop suggesting that Emeralds are useless, and learn to play Minecraft. Thanks.
