Currently, in Minecraft, there are several types of Minecart. These include:
Regular Minecarts
Furnace Minecarts
Hopper Minecarts
TNT Minecarts
Chest Minecarts
Spawner Minecarts
And, well, that's it. I have always thought, since I started to play Minecraft, that more Minecart variations were needed, considering they're supposed to be used for transporting "stuff". The relatively recent updates including hopper, spawner and TNT minecarts partly filled this void for me, however - I believe the potential variations for minecarts are numerous.
To demonstrate this, I set up some prototype suggestions in a superflat world using some NBT sorcery:
Daylight Sensor Minecart:
This minecart would be crafted exactly as expected, with a minecart and a daylight sensor, and would activate detector rails only if it is currently daytime.
Crafting Table Minecart:
This minecart would simply allow the creator to access a portable crafting table for use in, for example, strip mining or wherever crafting may need to be done on the fly.
Anvil Minecart:
This minecart would allow the user to repair or rename wherever they pleased, and would work exactly like a regular anvil. After the anvil breaks, the minecart would revert to being an empty minecart.
Command Block Minecart:
This minecart would allow for some cool redstone stuff, like better randomisation of players, because it could be always moving. Pretty self-explanatory, really.
Beacon Minecart:
Beacon effects on the go! However, I am not sure how this would be activated. Probably by direct path to sunlight, and perhaps the player must be holding the correct amount of storage blocks to receive the efffect? If you have further ideas for this, please comment on it below.
Jukebox Minecart:
Just cause why not, eh?
These are just a few of my suggested minecart variations, and many more are possible and, in my opinion, would be great new additions which do not damage the balance of the game.
Maybe this could even include a method of using leashes to connect together minecarts, forming a sort of train. However, this may not be worth the cost, since leashes themselves are not yet craftable.

Command block and jukebox cart would be nice but the rest seem useless. For the anvil/crafting table carts they would roll away and cancel the crafting. And for the daylight sensor cart you could just use a redstone gate and a daylight sensor to make sure that it was day and you received a cart.

I understand what you mean, but this isn't at all what i'm going for here. I'm looking for utility, not "OMG ADD ALL THE MINECARTS EVARRRR!!!!1!".
However on a brighter note, the jukebox cart is awesome
