So, there is the spruce, the oak, the birch, and the jungle wood trees, right? Well I thought about a new one, and I'm sure others have, too, but I have other things that have to do with it than just a new looking tree.
I think adding a maple tree into minecraft would add to more building options and even food choices, the way I think of it.
Simple enough, the body, or, how the tree appears, is similar to a birch or oak tree. From either four blocks of wood to ten, topped with an afro of leaves, the maple tree has a combination of jungle wood and spruce wood hue. That would make it a dark brown, slightly reddish bark. The planks of course are self-explanatory.
The maple tree drops maple tree saplings, just like any other tree. But it also drops something more, and something less. It does not drop apples, yet, instead will drop "maple sap", a orangish brown ball of slimey goo.
Maple sap can be used in a furnace, and cooked into "Syrup", and syrup is the only use for maple sap. Syrup can be used in multiple ways. This means crafting recipes.
There are three recipes I have thought of so far, and those are (Imagine the following layouts like a crafting table):
1. (S = Syrup, W = Wheat, O = Nothing)

This recipe creates the "pancake," and by putting these ingredients into the workbench, you will get two pancakes.
2. (S = Syrup, B = Bread, O = Nothing)

This recipe creates the "stack of pancakes" or "stacked pancakes". You cannot use normal pancakes to craft these in a table. Because it uses nine wheat to craft, it has almost the same idea of cake, where it can be eaten multiple times. It's appearance is three normal pancakes put on top of each other, and that is how many times you can eat it. By putting these ingredients into the workbench, you will get two stacked pancakes.
(S = Syrup, B = Bread, O = Nothing)

This recipe creates the "French toast", which uses the same ingredients as a pancake. (Yet the wheat needs to be in bread form). The french toast gives the same amount of hunger as a pancake, which makes both the pancake and fench toast pretty much the same. The only purpose for both of these is just for raw creativity. Putting these ingredients in a workbench, you will get two french toast.
And so this is all I have thought up so far, and still is a work in progress, but maybe you guys could help me out, like suggest how much hunger refills each food gives, and even recommend what things I should change about this idea.
I actually like the idea, another tree or two in Minecraft wouldn't hurt at all. The Maple syrup drop could be neat, but with the food...
Now, I love the idea of stacked pancakes. Something new besides Cake as a block like that could be nice. But honestly I think that's the only food item that would really "fit" into Minecraft.
So if the Syrup only made that food, kind of like eggs make the cake, they could have another use as a potion ingredient? I know it wasn't originally intended, but it's a suggestion for your suggestion. This Maple Syrup could be used in a brewing stand with a water bottle to create a Potion of Slowing. Name explains what it does. That would make sense, I would think.
I like the idea for the tree. Maple trees are great. I would love some dark-red maple floors. There are some things about the food I don't like however. Instead of using bread for a stack of pancakes, why not just stack pankaces. Plus, wouldn't it be better to include and egg and a bit of sugar in the pancake recipe as well?
About the collection of sap, will you get it from the logs like you would in real life, or will it drop from leaves like apples. How rare will the sap be? Can you craft a spigot to farm sap?
How much of the hunger bar will be refilled by eating pancakes? What about french toast?
Will the maple leaves be red only like the tree outside my house? Or will they be green? Maybe yellow? If I'm not mistaken, I believe there was talk of adding seasons to Minecraft. Will the leaves change colour based on season if that is indeed added?
These are just some things I thought you should include in your post.

Now, following Purechillos's idea with the slowness thing, what if you could put the syrup on the ground and it would slow entities? It would be sort of like a cobweb, but not as obvious because it would be brown instead of the cobweb's vibrant white.
I think more trees would be nice, but the idea of having maple syrup fall out of the leaves is a bit strange, maybe you'd have to get it out a tree tap or something? I'm not sure what they're called.

New trees? Yes. New food? No. Though Maple Syrup could be used in brewing.
But what about stacked pancakes?!
Don't tell me you don't want another cake-like block! They didn't give us melons, it could be nice to have something more. It wouldn't really be another "crop" type food. Or a pumpkin pie.
