The main mobs in the game have rare drops. Zombies drop iron/iron tools and carrots, skeletons drop bows and enchanted bows, pigmen drop gold ingots and swords. Wither Skeletons drop stone swords and skulls.
What about the others?
I am not sure if this counts as a wishlist, though mods can feel free to remove this.
Spiders could have a rare drop of wool and fermented eyes, and cave spiders could have the same, though with cobweb instead of wool.
Villager zombies could have the same as zombies, though when it comes to dropping tools, lower chance of sword/shovel, higher chance of hoe/axe. And the carrot/potato could be a lot more common.
Creepers could have a chance of TNT, and redstone, since that ignites TNT, and zombies drop iron, so it isn't out of nowhere.
Silverfish could drop iron, since iron looks a little like silver. (Well, not in real life, though in minecraft, since iron is a bit more orange in real life.)
Endermen could drop Eye of Ender, or coal, since it is the same color as endermen.
Witches could have rare drops for tier 2 potions, or potions currently unavailable without inventory editors.
Slime could drop water, item form, not in a bucket, while magma cubes could drop lava, item form.
Untamed Wolves could drop lapis, to continue with the trend of dropping ores.
Blaze could have a chance of dropping emerald, continuing with the trend.
Ghasts could drop emerald as well.
I don't think that non-hostile mobs should drop rare items, since they can be farmed, and are easy to kill.
Feel free to suggest better items, or disagree, though with reason.
The last question in your poll is one-sided. A lot of those drop ideas are so senseless that it physically hurts. Endermen drop coal because it's the same color..? What..? Slimes dropping water? Wolves dropping lapis? Ghasts dropping emeralds?
Maybe they should all just have a very rare chance to drop spawn eggs?
And chickens can have a... 15-10% chance to drop a random spawn egg? (Aside from mooshrooms.)
Wolves dropping lapis is just laughable, and as Deonyi described above, canine jewelry dealers. I'm not sure how ghasts/blaze would drop Emerald, because it's only obtainable via mining it in the Overworld or trading with Villages, so why put them in the Nether? I don't know exactly why you would choose it's drop via the color, either. For example, an Enderman is a creature that inhabited from the End. I don't know how or why it would somehow interact with Coal, so why have it as one of the drops? Same with silverfish, a silverfish is a small organism. Although its monster eggs are stone, I don't know how it would interact with Iron ore.

Well, sort of my point is more mobs should drop rare drops. At the time, I couldn't think of any good ideas, so I was just going to wait for some posts to have better ideas. I knew my ideas were mostly bad.
