We should be able to scoop away flowing water with a bucket or an empty bowl (or flowerpot, or empty bottle, or a helmet, or a blaze rod). Simply hold an empty bucket or bowl in your hand, and right-click on a flowing water block. The flowing water would go away for about half a second. If you were quick, you could scoop your way across a stream by clicking block after block. The water comes back of course. Also, this doesn't actually fill up your bucket. You need a water source block to fill it up.
Yes, you can already do this with torches, sort of, but it's not really effective.
Sounds like a good idea, useful for going through caves that has flowing water pushing you back.

In creative mode, yes. But for survival, I don't think bailing lava should be easy.
