A fairly simple suggestion. This is just something that I think would give zombies a difficulty buff rather than a whole new mechanic, and in my personal opinion, should replace the "chance of spawning another zombie" feature that is being implemented.
Basically, when the player gets hit by a zombie, they have a chance of being given the "hunger" potion effect. This is exactly the same as the one you get by eating rotten flesh- it accelerates the loss of hunger points- and would last for the same duration- thirty seconds. There would be just a small chance of this happening, to make zombies slightly more threatening but not completely deadly like cave spiders. This chance would be affected by difficulty- 0% on Easy, 5% on Normal and 15% on Hard.
This would have previously good suggestion, but now zombies can wear armor, wield swords, group up in packs, call more zombies, and see the player from very far away, and can attack up to 4.5 hearts. so at the moment no.

However, I do think this'd add to the transformation Zombies are currently undergoing from the weak, harmless mob they used to be to a tough, deadly monster that poses a decent threat.

They should leave the current mobs alone.
Buffing the mobs that spawn from the beginning makes it difficult in the beginning and not later on, since later on you can wipe the floor with them.
They need to add new mobs that will spawn when you've lingered in an area for a while.
