That kind of thing doesn't work for a game with 10 million players. It would be IMPOSSIBLE to bugfix. They would report intended features as bugs and think bugs are intended features.
Because this worked for the Seecret friday updates.
No one knew what all the features in the seecret fridays updates were until... the day after it was released!

Just a few selected players doesn't work. This kind of thing needs MASS testing. Like thousands of players! EXACTLY THE POINT OF THE SNAPSHOTS! Besides... if you want it to be a surprise then just don't read the update logs or snapshot descriptions.

There is a system for that. It is called not playing snapshots and not looking at the patch notes. All the sense of discovery, and you don't screw over the people who want the game to be as bug-free as possible and you don't force people to not know what is being added before updating.
