Ok, we have a peaceful setting, easy, normal, and hard. Then there is hardcore mode.
This mostly effects your health in general. That is four options for difficulty and then the hardcore game mode.
These only four options could easily be multiplied by having more depth like a sub difficulty category.
examples:
Shortly after beds came out, the realistic darkness of night was removed and became more of a twilight. This made it twice as safe to travel at night effecting the overall difficulty of the environment. No longer could a creeper ambush you, or a skeleton snipe you in its natural habitat, darkness.
Night time
Default night l------------------------------------------------------Dark night
Now, if we were playing on hard we would add another difficulty enhancer for the player that could just turn on or off. Moving the slider to dark night, turning it on, would make the difficulty of hard to harder.
Again, difficulty increases, turning it on or off will effect the players decision making threw the whole game on were to put that fireplace in their wood house.
What about animal generation?
Few -----------------------------------l------------ Herds
Again we could increase animals or decrees effecting the difficulty.
Mineral abundance?
Few Metals ----------------l--------------------- Abundant Metals
Few Gems -----------------------------l-------- Abundant Gems
Few Coal -------l------------------------------- Abundant Coal
In short adding in depth options like this would make the difficulty experience more customizable and far less rigid.
These are just a few off the top of my head that are already part and have been in the game.
If you like this alternative to balancing difficulty and game play with out changing the core game or would like to add on feel free. Let me know what you think!

Excessive animal depth is something I've heard a lot of people complain about for Superflats....
That aside, I think these would be interesting additions into the game~
