I would like to point out that you would have to do much more than retexture the current villagers. Villagers cannot hold armor or items, and they certainly do not attack when provoked.
How would it work to have these villagers only in adventure mode? On a server, how could one player see neutral zombie pigmen, and another, passive villagers?
As for my opinion of your suggestion, I like the current villagers, and would not like to see them disappear. Zombie pigmen would also look terribly out of place in NPC villages. That's just my take on it, though.

That's actually a great idea, except the zombie pigman sounds effects would ruin it.

You can't simply make the zombie pigman liek the villager, it'll still look like a pigman with its hands sticking out. Also no villager behavior and trading and lotsotostostostosta things xD

I'm do apologize, I didn't think about what you meant. Changing which mob you retexture wouldn't solve every problem, though, as zombie pigmen can't trade, open doors, and are not tied to villages. So you could take the zombie pigmen and put them in villages, but you would have to change their AI so that they could no longer be considered "retextured zombie pigmen". You really don't need to retexture zombie pigmen, all you need to do is give current villagers the ability to hold weapons, wear armor, and attack players. The problem I mentioned in my first post, that of having different mob behavior for different game modes, still remains, and should not, I believe, be forgotten.
