So, we can fire eggs, snowballs, arrows, and flame charges, drop TNT, Water, and Lava blocks, as well as set adjacent blocks on fire.
I suggest we can do MORE stuff, depending on the item we put in it.
Flamethrower
Place Blaze Powder in a dispenser and activate it to fire out a 2 block jet of flame that deals damage and sets mobs and players on fire.
Shotgun
Placing a Gravel block inside would cause it to shoot tiny rocks out in a spread fire pattern, hitting mobs and players in a cone up to 5 blocks away.
Rocket
Placing a Fireworks rocket in a horizontal dispenser will make it fire straight. They do not deal damage, but work great as diversionary weapons.
Anchor
Placing a fishing rod in a dispenser would cause it to fire out the hook when activated, tethering mobs to a 5 block radius around it. Activating the dispenser again would break the tether and use one use on the Rod.
I really like this idea; particularly because I support the idea of dispensers having more uses in general.
I would only change the name of shotgun, honestly I don't have a suggestion but it feels weird mentioning guns in vanilla minecraft at all. Also I always hated that horizontal dispensers shot fireworks straight up. It doesn't make sense.

Another suggestion if I may add; Mojang originally wanted spike pistons that would push out a spike. A way to activate that would be to have a sword in the dispenser. When activated by redstone the sword would stick out by one block and deal damage only on contact- not contstanly like the flamethrower. The balance is that the sword would have to be retracted before it could deal damage again.
Some damage values would be nice, as well as time duration for the blaze powder.

It seems like by the same logic you could put cobblestone in a dispenser and have it shoot rocks. I don't like it, but I can't give you a good reason, so feel free to ignore me until I come up with one.

Except for the rocket, I agree. I use horizontal dispensers to launch rockets all the time, either for normal launch from a wall or in a burst stylelaunch.
