I definitely agree with the player lowering the difficulty that they're playing on. If you can't take the heat, turn it down. The kitchen is great though, so don't get out of it.
These mob features make them a lot more interesting and unique, especially that zombie one (wonder how a grinder with a couple hundred zombies and a player would fare in a toss-up...Splash potions of healing needed, maybe). Of course, that feature is still being refined.
I have never used, nor agreed, with the concept of switching difficulty from Hard at any point. Have to say though, those skeletons can actually hurt you now, if you don't have a weapon.

They should take the new features that are making Minecraft harder away from easy so both casual and hardcore players will be happy. Normal, of course, would have some features from hard and easy.

I suggest a middle ground. Currently, the speed at which a Skeleton will fire is based solely on how far you are from it. And the Zombies spawning more Zombies (while not complete, as it is supposed to make them spawn away from the player where they can't see them) is the same amount at the same rate, regardless of difficulty. Why not make so difficulty affects these things as well? Suggestions:
Zombies Spawning Zombies
Easy: Does not occur, or does rarely
Medium: Occurs every so often, Zombies must spawn below light level 7 and at least 20 blocks away
Hard: Occurs more, Zombies spawn below light level 12 and at least 10 blocks away

Easy: +25% Speed increase max
Medium: +50% Speed increase max
Hard: +75% Speed increase max

This is a good idea. Sometimes I forget about the days where I was too afraid to play on anything but peaceful. And when I did not know you needed an iron pick to mine diamond. And when I thought lava was just orange water.

Here's some advice: don't take them on by hand. Make a sword.
I will agree the skeleton buff was stupid, especially when they have enchanted bows. But, you still have Easy or Normal. Zombies aren't the most "able" mob in the game, so more of them being summoned can just be reworked into more drops and experience for you.

For example, creepers explosions should deal way less damage on Normal and Easy than on Hard, instead of just changing the time interval before the creeper explodes.
In fact, several other mobs characteristics should be adjusted according to game difficulty. Such as hit points, movement speed, attack speed (particularly with the gatling-speed arrow-shooting skeletons), etc.
And even non-mob related game elements should vary according to game difficulty. Falling damage, for once, could easily be lowered on Easy and increased on Hard.
Currently: Points of damage (i.e. half hearts) from a fall = Falling height minus 3. So you start taking damage when falling 4 blocks or mroe and if at full hit points you die when falling from an height of 23 blocks.
Suggested:
- On Normal: it would stay as it currently is. Damage starts at 4 blocks, and kills at 23 blocks.
- On Easy: Points of damage = (50% of Falling Height, rounded up) minus 2. So damage starts at 5 blocks and kills at 44 blocks.
- On Hard: Points of damage = (Double Falling Height) minus 4. So damage starts at 3 blocks and kills at 12 blocks. That is not exagerated at all, given that this represents a fall from a height of 40 feet! 3 blocks may seem low to some but it's ONLY a tiny 1 damage. If you are not hungry then it's totally negligible, and it you are hungry it would just encourage players to use all the old tricks in the book: make stairs downwards, ladders, drop a pillar of sand then shovel down, water ladder, etc.
Natural "not hungry" regeneration speed could also depend on the difficulty, and also the range at which you do regenerate:
- Easy: If you have less than 50% hunger, then you heal naturally, and at three times the current speed. Yup, that's easy!
- Normal: Same as currently.
- Hard: you heal naturally only when at exactly zero hunger (i.e. all drumsticks fully shown). And you heal three times slower as currently.
etc.
That way, choosing difficulty would become a real choice that really matters.
