Don't we all have chests full of the stuff? Rotten flesh, I mean. The stuff just sits there in our warehouses, taking up precious space in our chests, rotting away and making that area very unpleasant to visit. But we hold on to it anyway, being the pack rats we are. "Who knows," we think, "it could be useful one day. Just like hoarding loads of Netherrack was when smelting them became an option." Well, my friends, and also my enemies, I have the suggestion for you.
Leather.
So we all know leather is just skin, right? I mean, stuff is done to it to make it usable the way we use it, right? But it's just flesh. My suggestion is to grant a cauldron the ability to become a bubbling cauldron when it has water in it and flint and steel (or a fire charge) is used on it. Then, it can be used to cure rotten flesh. Now we take nine of these "cured skin" items in a crafting table to make one piece of leather.
I don't think this is very overpowered. I recognize you wouldn't be able to do this early on the the game and that by the time you do you likely have some cows already, but I believe it will A: give us something useful to do with the stuff and B: fit a nice little niche of Minecrafters who prefer their food source to be the 100% automatic chicken farm but still want books. This would be a nice way for them to not have a cow farm in addition to their chicken farm.
Anyway, tell me what you think and any improvements you might have on this. And don't forget to vote!

Edit: It has recently come to my attention that there are some who are grossed out about this concept (wearing dead skin). While I sympathise with their feelings, I must remind all who share that view that Minecraft currently allows you to eat said dead and rotting skin.
Most times iron armor is easier to obtain than leather armor.
Instead of nine pieces of rotten flesh I'd suggest using just 4 pieces, reason being it would be very expensive to a newly spawned player. 72 rotten flesh just to craft the leather tunic, zombies drop 0-2 pieces. I'd imagine the player would spend more time mining for iron than risking their lives to kill zombies for armor.
Plus a use for cauldrons! but the process on your idea doesn't seem right maybe tweak that a bit.
Other than that I support this idea because it makes leather armor a bit more practical.
Transform FLESH into LEATHER? What is this sorcery? Sorry but I does not think this makes any sense for me. I'd rather have it's drop rate decreased to around 10%, and use it as a potion ingradient.
I mean we can already normally gather leather. In my opinion, this would NOT be the best reason to give cauldrons a use. Too expensive as well. I would prefer to eating it, or feeding it to my wolves. Besides, can't we just throw surplus of rotten flesh into lava or cactus. No support, sorry.

Don't really support for thematic reasons. Flesh isn't the same thing as skin. You can't turn muscle fiber into leather. Leather also has to be cured before decomposition sets in, otherwise it's just rotted skin.
I agree Rotten Flesh needs to be more useful, but this doesn't really seem to be a good way to go about it.
I could see a reason for this, as an alternative to killing Cows in situations where you aren't near any (like an island spawn or SMP and someone killed them all). So yeah I guess I can support this. It certainly doesn't hurt anything as Leather armor is basically useless and the one useful item made from it besides Books is being removed (Horse Saddles are apparently becoming pig saddles and not being craftable anymore).

I don't think this is very overpowered. Also, rotten flesh is good if you wish to own a large amount of dogs.

Nah, they already nerfed bone meal severely, the player would use the bone to grow quick crops for food instead.
