This is my personal opinion, but I think Minecraft would be a lot better with more sounds. Here is what I was thinking:
Forest (regular): Day: You would hear birds chirping, leaves rustling, and a small breeze. Night: Owls hooting, crickets chirping, and possibly rustling leaves, and wind
Taiga: Day: Wind, leaves rustling, and maybe the sound of someone walking in the snow? (makes it a bit creepy) Night: Wind, leaves rustling. You would also hear wolves howl every now and then.
Plains: Day: Wind and rustling grass Night: Same as day but you would hear bugs like crickets
Desert: Day: Wind, maybe bugs (flies) and rattle snakes Night: Wind and coyotes howling.
Tundra Day: Wind (can't figure out anything else) Night: Same as day
Jungle Day: Wide variety of tropical birds and bugs. Maybe a monkey too Night: Many bugs, leaves rustling, and frogs
Swamp Day: Frogs and bugs Night: Same as day
Extreme Hills: Day: Wind. The higher the altitude the stronger it sounds? Maybe hawk sounds too Night: Wind. Same with the altitude thing during the day. Thank you to Jukakun for giving suggestions for this biome!
When it rains/thunders/snows, the wind will pick up to a howl. The leaves will rustle louder too.
Note: these are only the main biomes (not including mushroom) If you have any suggestions for other sounds, feel free to post below!
That would make Minecraft very interesting, for Tundra i would suggest the steps on snow that you suggested at Taiga, they are creepy for sure! I have an idea as well:
Extreme Hills or Extreme Hills Edge: Strong wind, depending on your altitude, birds like ravens or falcons
