Personally, I think that if Mojang was able to make the villages more like the Millenaire villages were like, it would offer for a whole other realm of gameplay. Even by changing the structure/trading types based on biomes, it would allow a feeling of almost a story to be played.
The Desert Biomes would not have a blacksmith, but there trades would consist of mostly water trades, because of lack of water in the desert, and trades that offered maybe a kind of sandstone not obtainable outside of these trades.
The Ice Plains Biomes would have maybe a fur shop instead of the blacksmith houses. And most of the structures would be in an igloo format.
The Plains Biomes could stay the same, but maybe offer a few different trading styles/options.

What if we didn't remove the blacksmith from any of the biome-related villages, but rather implemented unique buildings in addition to the blacksmiths? I think that any village past the stone age would need a blacksmith, regardless of the location.
I agree with this (Except removing the blacksmith from the desert.)
An Extreme Hills village would be like a mountain temple village.
All the Ideas above would make me actually seek out villages rather than just building my own from the ground up.

There sould be a forest village, and instead of a blacksmith, there is a lumberjack.
