Once agitated, they'll scuttle after the player on spider-like legs, vocalizing and attempting a bite attack. They can be recognized because they'll open their lid when a player turns his back on it.
When killed they'll drop a rare treasure chest item: cocoa beans, watermelon seeds, a pig saddle.
They can also be crafted in the 3x3 crafting grid, using two Trapped Chests and a Pumpkin, and can be placed like normal chests.

You did just describe what Silverfish are, exploding blocks that attack you. I think a new passive/hostile mob is a better idea than an editional Silverfish spawner. Minecraft is a fantasy RPG of sorts, and although both are plausible... I would take the new edition to the mob pool than a new block spawn for the Silverfish.
The problem is the drops. I think you should change the drop, like instead of rare materials(As people can just use this to spam a lot of items), maybe you could have them drop chest, like in the Aether mod, and change the crafting recipe to 1 chest and a pumpkin, to stop abuse but at the same time not remove balance
(I didn't say "No Crafting it" because I actually think its a good idea as long as it does not have that drop and that It could trick griefers and theifs, so you actually can protect your base when your not on the server.)
Support, and I'd actually like to model this idea on Techne when I get the time. I could also suggest an additional attack - if you move away from the mimic by a certain radius, the chest could whip out a long tongue that snags and pulls you back in, sorta like a red leash.

The concept is not too bad. However, you should not be able to craft it. If you mass-crafted those things, it would be a matter of time until the drops of one of them becomes seeds or the SADDLE, a thing that is considered the second most hard-to-earn trophy item (other than Dragon Eggs.)
An alternative to that would be to simply make sure that saddles only drop from a naturally-spawned Mimic.
I'd prefer it if the chest had very faint Slime features, and instead of spider legs it would jump like a slime.
And yes, no crafting them. They're magical creatures of unknown magical origin. At most you could enchant a chest to become a mimic, with alternate enchantments being traps, or a small amount of increased storage etc.

It's a pretty cliche aspect of mimics that they have these huge tongues, plus I think it would be hard to make it look good with Minecraft's low-res look. If you decide to model it and you give it a bid red tongue, that's your decision, but it seems cliche to me.

Ah, well. It's not an entirely bad idea for Minecraft, but I wouldn't exactly want to find them myself, being the casual player I am.
I've never played Terraria, so... no. I have played Final Fantasy, Dragon Warrior Monster, Super Mario RPG, Dungeons and Dragons, and read or watched dozens of books and movies that have mimic chests. I never claimed it was an original idea, although I did take deliberate steps to remove it from the cliche chest-monster.
I think those deliberate steps have tripped your proposal in my eyes. You've taken something that works, and tried to make it different while essentially the same thing. A better approach would be to take the concept, and apply the existing themes. Yes I'm plugging my slime theory here, but really - what we're proposing is a living cube. Do we have living cubes in Minecraft? Yes we do, they're slimes, they bounce, and they have cute faces.
I deliberately took those steps for several reasons. The first is that the classic, red-tongued mimic chest isn't really compatible with Minecraft's art style, whereas the spider-body can cannibalize existing spider animations. The implications of the spider body is that it's also vulnerable to Bane of Arthropods.
Finally, yes, I also want to diverge somewhat from the standard simply because I want it to stand out, but that's because I want Minecraft to stand out. A mimic chest has two levels: broad concept and narrow implementation. Broad concept is simple: any monster disguised as treasure. Narrow implementation is the classic design: a chest-shaped monster with bulging eyes and throbbing tongue emerging from inky darkness.
I'm taking the broad concept and implementing it in a different way to serve gameplay needs
Can we apply that? We can give chests a very faint face that can be spotted by the vigilant, or missed in a hurry or darkness. We can apply the movement and the attacks.

I'm not opposed to the chest-as-slime concept necessarily; indeed that was more or less my initial pass. However, the hinge as jaw has been done to death, and the last thing I want is to turn Minecraft into a complete paint-by-numbers plagiarism party. Plus, slimes and their magma cousins may just be my least favorite enemies.
I'd like to propose a compromise: we use the chest-as-slime model, but an aggressive Mimic will open its lid to reveal a pumpkin face underneath. This provides a certain copacetic appeal: by reusing assets, it holds the thread of Minecraft design aesthetic. I also like the reiteration of the pumpkin's primary use: animating magical servants. Pumpkins can bring life to snow or iron, so why not chests?
This seems like a good intersection of cliche and original.
