I'd love for horses to be added, but I'm not going to suggest that for the 9000th time. For pigs and for horses (should they be added), you should be able to use items while riding. Riding a pig is pointless and offers very few and weak advantages at high costs, and the big one is that you can't attack and move at the same time, making you a really easy target for monsters and humans!
If you have a carrot on a stick anywhere in your inventory (or maybe just quick slots), it should give you pig control. You shouldn't need to hold it out to control the pig (but Pencilshavings5 suggested that this should give you increased control). You should also be able to make the pig run by doing what would normally be a sprint. This way, you'd be able to move around more like a normal human (minus the jumping) and use items at the same time. So you'd be able to attack while moving.
This would make pigs much safer to use while riding in dangerous areas because you would be able to knock creepers and stuff back instead of being a sitting target, and it would offer a PvP advantage: Shooting arrows and other stuff while moving at player sprint speed and while facing any direction. If you've ever had a fight with a guy with a sword in the ocean while you're on a boat with a bow shooting while moving backwards, you'd know that this is a bonus. It's called a Parthian Shot.
IMO if horses are added, I don't think this should be added for pigs. By then, pigs will probably be a sort
of "low tier" transport mob. I imagine that the whole POINT of horses will be that you'll be able to do other things like fight, use maps, and possibly even build while riding. Otherwise, they would just be faster pigs.

Sounds like a good idea; I didn't think of that.
