It doesn't make sense that endermen are completely immune to arrows and splash potions. Note that this isn't even an issue of them teleporting away from the arrows or splash potions- if placed in a situation where they cannot teleport, the arrow will bounce off or the slash potion will inflict knockback but no effect. In my opinion, both arrows and splash potions should be allowed to hit endermen, but the enderman should teleport afterwards (and continually if given a poison potion) just like what happens when an enderman gets hit with a fire aspect sword.

People think endermen are OP because of this, health and other things. One thing to even that is the weakness to both water and lava, as overworld mobs have water immunity, and nether mobs have lava immunity.
Endermen were meant to be the scariest of the common mobs. Knowing that you can't use potions or arrows against them adds to that.
Therefore, I believe they have a good reason to be invulnerable to them.
No. No mob in Minecraft, but the Wither, is OP. It makes endermen what they were made to be: a semi-rare, hard mob. Their avoidence of any projectile allows them to hurt youunless you place water/lava, or luckily hit him and keep him away.
I'm not saying that I want this changed because Endermen are OP. They will always be OP because they can teleport, they deal a massive amount of damage, and they have twice the health of any mob short of the . The point is that if you manage to actually hit an endermen with an arrow with looking at him or having him temeport away you should get the hit. They're still going to teleport into your face and kill you.

Why not make it so that if you hit them with an arrow, they teleport right into your face and attack? That would let you hit them without making it incredibly easy to fight them.
Endermen are very easy to fight, mainly because they aren't initially hostile.
Step 0 - If you're hunting for Endermen and worry about inadvertently looking straight at them, which makes them hostile, just wear a Pumpkin on your head.
Step 1 - Locate an Enderman. They *seem* to spawn more in deserts, but maybe it's just because deserts wide open and high-constrast terrain (the yellow sand makes a good background to spot monsters at night) that they generally make good monster hunting areas in general.
Step 2 - Build a small 1 deep hole in the ground, 3x3 wide. Make a roof over it, so that the Enderman, being 3 high, won't be able to enter.
Step 3 - Look at the Enderman to anger it, then look down to let him pursue and try to move to the very center of your hidey hole. Even if he was very far away he'll teleport to attack, but he won't be able to strike you, while you can hack easily at it's legs.
Step 4 - When the Enderman is too banged up, if you relent your attack and stop damaging it for even a fraction of a second he will simply flee by teleporting far away, which will definitely occur because of the knockback of your attacks. So to avoid that stop your attack after you dealt SOME damage (but not too much), then dig the two blocks under the Enderman so that when you start attacking again you can press forward this time, and jump out of your hole while still attacking (don't use a weapon with knockback magic on it!), thus the Enderman will be constantly under attack and won't be able to flee (well, most of the time anyway). It is quite possible that this way you'll get hit a couple times, nothing that iron armor or better won't allow you to easily survive.
There is another, costlier but funnier way:
Step 4 - You had previously placed a TNT block about 3 blocks away from your hole which now allows you to finish the Enderman in a big kaboom.
Please stop trying to change things that were put in for a reason, the endermen were supposed to be how some of you say "op" , If you could just kill them with a bow that wouldnt be much of a fight now would it?
think what happens when you face a creeper with a bow, It kills easier yet it kills the fun out of risking jumping forward and striking it with your sword knowing that being near for too long would cause an explosion.
But creepers are common mobs so it does not matter as much, whereas endermen were made to be semi-rare as you are more likely to see more zombies skeletons spiders ect. So I guess you could call them sort of a "mini-boss" if anything, though I dont believe they are overpowered enough to claim that name..

2- OP is not op. Ops are OP, but that's another story.

I have never noticed this. I don't really use splash potions, but I know I've shot an endermen with a flame bow and lit them on fire and damaged them before the warped away. Can't really give or withhold support because I don't even think this is a problem.

I'd have less of a problem with this if the endermen actually teleported before they got hit, but the arrow bounces off and then they teleport. Same with splash potions- They teleport after being hit but still don't get the effect.

However back to the topic, I think that endermen are perfect as they are. The fact that you can't hit them with arrows is awesome because it adds that bit more of a challenge to the game. Realistically this effect is stupid but for the game it is brilliant.

It would still be a challenge. Imagine trying to shoot something that 1- teleports - you can't look at and 3- has twice the health of every regular mob. Also, there's still incentive to kill them with a sword because bows can't have looting.
I would even advocate buffing them in other areas - making them maintain agro when they get hurt by environmental damage for instance. That would make them a lot harder, as it is fire and water render them no threat at all.
