Half the time they dont have good sales and get killed by zombies within a few days.
To the point: I have come up with little ideas to add to villages.
Ideas

Villagers I thought of: Doctor, Guard, Elder, Merchant and Blacksmith*
*A tweak to it.
Doctor
------------------
Appearance: White robes.
What it does: It will sell healing potions for 1-3 emeralds each. It might also be able to heal all health, and hunger effects (Posion, hunger, ect.) for 3-5 emeralds.
Spawns: 1 per village
Guard
----------------
Yes, Guards for villages are golems but 99% of the time, they dont even spawn in villages that are natural.
Appearance: A villager in iron armor holding a iron sword.
What it does: Defends village from hostile mobs. Also will attack the player if villagers are attacked. Will forgive in 2 days. (Minecraft days)
Stats: 6 points of armor damage, Normal villager health and will do 2 and half hearts of damage.
Spawns: 3 per village
Merchant
------------------
Appearance: A villager in nice, patterned clothing with gold chains
What it does: Unlike normal traders, it sells rarer items like armor and diamonds.
Spawns: 1 per village. 2 rarer or larger ones.
Elder
---------------
Appearance: A villager in very nice designed clothing. Also has a chief hat and gold sword.
What it does: Controls the village. If you steal from the village or kill anyone, you can pay him emeralds to repay the crime. Will also attack when attacked.
Stats: 2 damage from a gold sword it carries. Has 5 more hearts than normal villagers.
Spawns: 1 per village. If killed villagers will 'elect' a new one in 5 Minecraft days. In the days there is none, the villagers will refuse to trade.
For the other ones, I have to go for now. If you like the ideas then support them. Feel free to add new villager ideas here! I will continue to post later.

Guard: I would prefer that they just boost iron golem spawning.
Merchant: That's what a blacksmith villager sells.
Elder: Maybe. This would change the basis of village mechanics, though.
Doctors: Eh
Guards: It's your job to protect the village, not NPC's. And iron golems spawn when there are 16 villagers
Merchant: Basically a blacksmith
Elder: You know, you can make yourself the elder...
Well of course villages are boring, what do you expect, a carnival?
And perhaps a search button villager too. Because, you know, people have suggested this a lot.
Doctor - Eh. Puts a small dent on making those kind of potions for yourself.
Guard - Yeahno. Perhaps we can stick with iron golems and not shell out a second village defending mob.
Merchant - Technically, all villagers are merchants. No thanks.
Elder - An Elder Scrolls city guard? One of the sole reasons villages exist is to take some things from them. No sword holding villagers please.
