This idea has a lot of potential. First off, apples can be crafted into seeds. You grow the seeds into Apple Tree Saplings. The reason behind this is that seeds, in Minecraft logic, would not be able to grow instantly into a tree. Once these apple seeds are grown into saplings, you can obtain the saplings and plant them anywhere.
Benefits of an Apple Tree:
These trees can have a 70% more chance of dropping apples from leaves. This can introduce the possibility of new biomes/ forests and a new wood-type.

Salad:
Crafted with 2 apples, 2 leaves, and a wooden bowl. Seeds can also be added.
Apple Sauce:
Crafted with 6 apples and a wooden bowl (In the format of a sign).
Green and Yellow Apples:
Obtainable via apple trees. Can have different benefits/ detriments.
Apple Juice:
Crafted with apples and a bucket. Can have benefits/ detriments.
Apple Treat:
Crafted with Wheat, Sugar, and apples.
Apple pie:
Crafted with an apple treat, sugar, and wheat.
(Please note that the quantity of each item, once crafted, can range around 1 - 10 items)
Hmm, apples are kind of a bad thing to base your food source on, but all this stuff just for apples, it seems like the same as everything else ever added, only with apple, I would rather have more variety of fruits, then focusing on one.
It'd be awkward as hell to have a huge update based on just apples. We have people here who argue bread should be given more flexibility by making sandwiches, or that we should have more than one type of cake, and sometimes we even get people here who constantly suggest chocolate milk.
The two types of Golden Apples are enough. I could maybe with live apple pie and green apples in Minecraft, but none of that apple juice or apple sauce stuff.

I like the idea of apple trees, because apples can be a real pain to get. Though I think it should act more like a melon/pumpkin where you plant the seeds and apples grow off the leaves of trees. Also apple trees would be smaller than normally small trees and you wouldn't be able to get wood from them.
Seems a bit over done. Too many foods, but I like the pie. The general concept is good, but could use a bit of tweaking to be more suitable for vanilla.

You're right, more fruit would be more interesting...perhaps you could have a fruit salad then.
