Overview:
If you paid attention in your history classes, "Man at arms" is a term used in Medieval to Renaissance periods to describe an almost professional soldier. What does this relate to the suggestion you ask? well simply put that: NPC Villages need guards, you might say "But they already have Iron golems!" "Isn't that the Player's job?" but I say no. For one Iron golems only spawn when the village has progressed (Meaning the Population and number of houses have increased) meaning that they are sort of a Second-tier guard, and also what if the player decides not to defend them? rather steal all their crops and leave? this is where the Villager guards come in.
Stats: Defensive: 25 hearts & 5 armor (+2 armor when having the "rested" buff) Offensive: 5 hearts (+1.5 damage when having the "rested" buff) Equipment: Iron helmet, Leather tunic, and an Iron sword. Spawning: For every 3 villagers 1 guard will spawn, or rather a villager will convert to the guard profession. (50% butcher 30% farmer 45% blacksmith 10% librarian 1% priest) Special: Ability to regenerate health at a slow rate
Behavior:
At day, guards will rest inside available houses in the village regenerating their health at a much faster rate.
and when leaving will receive a visable buff called "Rested" (It's visible by purple to reddish particles appearing around the guard) and will have increased offensive and defensive stats. At night however this is where the guard's purpose is shown, guard/s will survey the village making use of the churches watchtowers and will most likely be around an area with a large group of testificates it will only attack certain mobs that attack the villagers (meaning guards fighting creepers is a no-no) however they will not attack/chase mobs outside village radius, and they will also stop pursing/attacking mobs being attacked by the player. They have downsides however, they will not cooperate with other guards in battle. And when a large group of mobs are attacking there is a rare chance they will cower and run away (12% chance to be exact)
Conclusion:
Well I guess this is all I can think for now, I am completely unsure if the guards could be traded or hired by the player. Feedback,Suggestions, and the like are appreciated.

It might be a little overpowered for villages to have both Iron Golems and these new guards protecting them. Then again, a single zombie siege can wipe them all out while you weren't present to save them, and you lose a bunch of possible good trades because of that. I can agree how easy things get when you're able to take anything from their villages with absolutely no penalty, but that's one of the sole reasons villages exist.
I support what you're trying to accomplish with this suggestion, but I don't support these specific villager guards. I think Iron Golems should get some changes before hard work is put into yet another villager defending mob. Also, these guards won't stop players from mooching off of villages. If they see a gigantic amount of fully grown crops and houses with chests in them, players are taking that sh** no matter what. If guards are too much of a problem, people will just kill them beforehand or set traps for them.
If you werent present, then a big chance is that no mobs would spawn there as you would most likely be far away from the village.
You can still end up traveling a long distance in some caves with a village above you, unbeknownst to you, where it's night time and a zombie siege is happening. That isn't exactly the most common scenario, but stuff like that happens. Or you might discover a village, live not too far from it and simply forget to protect the village one night because you're balls deep in something else.
Though it's not the worst problem, as you can make new villagers from zombie villagers.
