Now that they've made golden apples affordable but useless, why not give them a use by allowing them to be enchanted? The enchantments should be relatively cheap since the apples are one-time-use items. That is, you shouldn't need that much XP to get good enchantments. However, none of these should last as long as the potion effects do except at high levels for some. These should all stack on top of the current effects.
Enchantments:
Fire Resistance: higher levels => more time.
Regeneration: higher levels => greater effect.
Instant Health: higher levels => more health.
Sharpness, Smite, and Bane of Arthropods (also applies to arrows shot): higher levels => greater effect.
Swiftness: higher levels => greater effect.
Athleticism: (makes player shoot arrows, throw projectiles further) higher levels => greater effect and more time.
Gold: (makes player have shiny gold coating and absorbs half of all damage taken like in other games) higher levels => more time.
Nausea: (just for a little balancing) only one level, hindering but not devastating to the usefulness of the apple.
When enchanted, golden apples get up to 3 of these in addition to the current effects.
It's okay, but in it's current state I would never use it. But then again, I also never use Golden Apples unless I find the Enchanted version in a chest.

Not without a blaze rod. Besides, this is more about short an intense effects than the long effects potions give.
