Now i'm sure this has been suggested before, but i believe a werewolf would be a rather interesting touch.
A werewolf could be disguised as a villager, act like a villager, and trade like a villager.
But on full moons. They could transform into a brown muscular wolf-like villager. These werewolves could drop fur that could be crafted into couches or chairs.
Werewolves can spawn naturally in NPC villages. And could be faster then the player.
And instead of a spawn egg. There could be a potion that when used on an NPC villager or player (i'll talk about that in a minute) could "infect" them with the werewolf virus.
Player infecting:
Player infecting, unlike NPC villager infecting, would only last 20 seconds or such and then ware off. While in the werewolf state, the player would lose control of themselves and attack any living entity they see. Also, when in this state, players could not be hurt no matter what weapon is used- This is an optional idea and could be changed if you think it is not needed. Players would only transform into a werewolf at night so using it in the day would be wasting it. Players do not require a full moon to turn into a werewolf.
I was hoping for a wolf-like beast that appears in the woods, but as this is your suggestion, I will use this. The idea of a villager that is the same as any other, except on a full moon night, which the player would be likely asleep, means that this mob would almost never be encountered, when the player would want to avoid it. Fur, would seem like a bad material for furniture, why not use the already existing, near-useless leather? As, for the effects, just plain OP. 20 seconds of invulnerability and slaughter. I think I've given a good reason not to support.
I had a suggestion a while back that added werewolves to NPC Villages. Except mine was slightly different and balanced. No Support due to overpowering.
