When I saw the title at first I thought that this was gonna be a suggestion to add something as annoying as bats, but it's actually useful and well thought-out. I would like this a lot.
Suggestion for the post: For each nest, there is one wild adult gryphon, that occaisionally flies away from the nest to find food. Instead of eggs, there is a baby gryphon in each nest that the adult feeds by taking animals (cows, sheep, pigs) to the nest. Throwing raw beef or porkchop near the nest will distract the adult so stealing the baby is possible. If the adult is in the nest when you go near it, it will become hostile and attack. To steal the baby, right-click it with an empty hand. Pick it up, but then nothing can be held until you put it down.
So, one of my friends has the "Support Gryphons" banner, and every time I see it I think, "I should probably go check out this suggestion at one point." But then I remember I'm lazy and I don't. That is, until just now. And boy am I glad I did check this out...
This is an extremely balanced suggestion that I find myself wanting to support even though I think gryphons are kind of stupid. (How does one mount something that is half lion?) The main thing I would end up using these for, should they be added, would be Roleplay servers. It'd be really epic. But, if I played on singeplayer (ever), these would probably be my goal.

Sorry, but this idea seems so hard to achieve that it becomes entirely useless. Either way, I don't like the use of any kind of mount. Minecarts are okay because you can't completely control it. Boats are okay because the only alternative is flying, and that doesn't fit in Minecraft. Gryphons are a far stretch from Minecraft's wilderness play style. In the OP, it was stated that you could not aim at a mob off of a Gryphon. Personally, I can snipe very long distances in one or two tries.
Let's put this in a scenario. Imagine you are playing on a faction server. You leave the spawn and have no armor. You almost make it to the forest.
WHEN SUDDENLY
A long-time player comes in on a Gryphon. He has full diamond armor, is an expert sniper, and has a god bow from a drop party. He takes aim and your health is reduced to half a heart. He swoops down and swings his sword and you die instantly. What just happened? Well, the Gryphon obviously gave him a huge performance boost. He was able to quickly fly from his base all the way to spawn and could not be taken down by even jump potions.
I didn't expect to like this, but now that I think of it, I'll give you my support.
If someone hasn't suggested this already, perhaps add a whistle system. What I mean is that you can leave your gryphon at home and then by crafting a whistle you can call your gryphon to come to you. A way you can make the whistle system balanced is by making them hard to make and lessening the durability.
Also, maybe you should add adult gryphons who protect their young but will be hostile. One way you can add combat to your gryphon is by teaching your gryphon to attack. You might have to battle your gryphon to make it willing to attack or kill mobs while riding it to show it how to hunt.
You can also add a system that makes it so that when your gryphon recieves a certain level of damage it will become incapacitated and you'll have to give it potions of health and regeneration to get it to fly again. Along with this maybe you should add a system that it will become loyal to the one who healed it, but keep it's loyalty to it's original owner as well. It will also lose it's loyalty to it's healer if the original owner attacks or kills the healer.

My suggestion: If your Gryphon is still a baby and a wild adult Gryphon see's your baby Gryphon, the adult should take it back to a home,
I think that will enhance gameplay, so you don't have a guaranteed flight access if you feed it,
