The End should be infinite, like Overworld and Nether.
First, you have to defeat the Ender Dragon. When you defeat, the islands generate that goes on until Far Lands. Beyond the main land, you will see obsidian pillars and some sort of ores. It can be Enderrium ore. Has the End Stone texture with ores overlay.
Well, there's only supposed to be one Ender Dragon, so that's a no to that...
I think you should be on a main island, where the boss fight occurs. After you kill the dragon, the rest of the world generates and you can infinitely explore a land of end stone, endermen, and obsidian pillars.

I like this better than the OP. But it still doesn't need to be infinite. Just enough so that people can get End Stone in large amounts without editing it in.

What if End Stone just regenerated? Every time you left and came back, any End Stone removed was replaced, or if new End Stone just Randomly generated near the Pillars, enough that the End Stone is effectively infinite, but one big Ender Desert would get monotonous fast. Plus there's the Endermen themselves, an infinite plain peopled by things that attack when you look at them- You'll never leave combat without staring at your feet the whole time.

Some people build in the End (for some reason). I don't know why, but they do.
As someone who sometimes lives in the end, I hope I can enlighten you on why some people choose to live in the End
1) FPS is way better in the End, especially if you light it up to the point where no Endermen will spawn.
2) You can farm in the same way you would in the Overworld (Trees, animals, crops, cobblestone generators, etc)
3) Endermen are only hostile if you hit them or accidentally agro them. Besides Endermen, you don't have to deal with hostile mobs.
4) You don't have to worry whether it's night/day or raining/snowing, so you're pretty much never in much of a rush to work on something.
5) There's just a certain atmosphere you just don't get in the overworld or Nether. Some people find that atmosphere creepy, but I find it relaxing.
6) I've always been a fan floating islands in Minecraft. I'm still a bit dissapointed that Mojang never implimented their skylands generation from indev as a new world type.
Anyways, back on topic.
I don't support this concept because there's nothing in the End that would be worth making the world infinite. We would be able to get more Endstone and obsidian and that's not worth making the End so much larger. Endstone isn't that desirable of a building material. Even if it was, you'd have to have a large number of people on your server to be able to actually exhaust all the Endstone on the island. And obsidian is also easy to obtain. Just go into a cave, find some lava, and pour water over it. You don't need hundreds of obsidian pillars.
If you went into details about the ore, I might be more inclined to support the idea. But I'd rather not make the End more laggy just on the whim of being able to find "some sort of ores." The only ideas I have for End ores would be a counterpart of ores in the overworld in endstone rather than smoothstone, which isn't needed because of how common ores are in the overworld.
Do you know how hard it will be on old computers? It already has to run 2 worlds simultaneously, then the third.... no.

It doesn't run two worlds simultaneously. One dimension unloads when you exit it and it loads up the other one. So in reality, other dimensions are just saved chunks and are not very different from just exploring an equal amount of chunks in just one dimension.
On topic: I do think there should be small End islands that generate randomly throughout the End, w/o another Dragon.
