I've been kicking this idea around for awhile now, and since mojang is more actively starting to implement some of the things people have been requesting I figured I'd give this big baaaaadie a shot! (Someone show this to dinnerbone for me!)
Spawning one 1/8th of every Plains biodome; "Mother Fluffer" Would be a passive boss mob until ether attacked, sheered, or dyed making it aggressive to the player. (Thus making it a neutral mob)
If you haven't guessed it already "Mother Fluffer" would be a sheep-based boss mob, probably 2-3 times bigger then a ghast, with probably 5-10 normal sheep following it around. Sheering mother fluffer (while in it's passive state) Will produce roughly 3 stacks of wool. Sheering while aggressive would produce roughly 2 stacks; while killing without being sheered would produce roughly 1 stack. Sheered mother fluffer wouldn't drop any wool. - Mother flutter would eat grass to regain it's health, and summon sheep (perhaps sheered sheep to prevent wool over farming.. not that having tons of wool breaks the game at all o-O...) to bombard (or attack) the player.
Another idea too would be to have to kill the mob by slowly sheering it down to nothing before finally finishing the boss off.
Achievement: Death by Shearing/bad haircut (finishing off Mother fluffer wish shears while the boss still had it's wool)
The main idea for this is not only to save files by reusing a already used mob model/texture; but also produce a biodome-related boss monster. - Other bonuses to this mob would be a large amount of wool given to the character; but also the change to add new items that could be used for future items. (Such as bouncy blocks, or blocks that reduce fall damage and more)
Edit: -I'm not just saying slap a giant sheep into the game and call it good; As some players have already pointed out it would be unoriginal to just make a larger version of a mob. Adding things such as wool layers, horns, or even tweeking the general shape are great ways to reuse already implemented data. (Great mobs that have reused data are: Magma cubes, Infected villagers, Witches, and wither skeletons) - So don't be quick to shoot down the idea of a giant sheep ;P
Also to add there hasn't been any "wild and out there" mobs since the introduction of mooshrooms, I think this boss mob would fit in rather nicely so how the terrain system current generates and provide players with a new challenge. (or a new backyard buddy if they choose not to kill mother fluffer XD)

And also for all mobs to be unique from one another. At least instead of a Giant Sheep, how about just a slightly bigger one like a Mountain Goat with horns for attacking? There now that will look a bit more unique.

Have you seen the giant mob? It was a resized zombie model. It looked and moved horrible because it was so out of scale.
That mob is also unfinished. I have a feeling when they do bring it in (if ever) they will fix some of these issues... (I have a feeling this is why dragons are being pushed back too ;P)
