OVERVIEW
This is a suggestion for the "Redstone Update". There should be a new pressure plate along with the new 2 weighted pressure plates (from 13w01a/b) that allows you to choose which items will output a redstone signal.
DETAIL
This could be done with a GUI popping up on right click of the pressure plate, showing items in a similar way to the creative inventory. From there, you can select the items which should output a signal, and maybe even the strength of the signal. EDIT: The signal strength could be determined by the number of the item placed on the pressure plate (thanks G6290 - make sure to read his whole post at the bottom of the page (post #20)).
USES
As Minecraft development is obviously trying to help support adventure maps (trapped chests), this would be useful for adventure maps, where you need a certain item to continue.
EXAMPLE
To continue to the next challenge, you need to mine a diamond. To make sure the player has mined the diamond, you can have a quartz pressure plate with diamond selected in the GUI to output a redstone signal and open the door.

Support! Simple, adds a use for Quartz, and makes it so in maps, you actually have to have "key" or whatever, instead of being able to throw dirt on a pressure pad
If it has a GUI it could then easily be modified by the player.
If what you mean is that the player could edit it so they could output a signal with another item, it could be made unaccessable on adventure mode, or only accessable by the orignal placer of the pressure plate.

Also, can you modify the texture of a pressure plate so that we could know what it looks like?
I have one question ... how many items could be selected in the GUI? Like, could you only select that diamonds trigger it, or could you select diamonds, gold ingots, and emeralds? In other words, what's the maximum number of items that can trigger the plate?

now lets say that that they have random stuff in them.
For each item matched, (dropped on the pressure plate) it emits a redstone signal of 3. So if you have all the (1 each) then, 3x5= a redstone signal of 15.
now, lets make things a bit different.

3 sponge MUST be dropped placed for any kind of signal. So, if you drop 3 sponge on the pressure plate, you will have a signal of 1x3=3 (1 because there is one slot matched)
but what about this?
easy. place 1 cobble for 1 slot matched. If you put 4 mossy cobble, for example, the signal would be: 4x3=12.
This system could allow the pressure plates to be attached with redstone to a dispenser, 15 redstone meters away, meaning that EVERY slot HAS to be matched in order to activate it. It would be attached to a stream of water, carrying the item from the dispenser, to the player. What this could do, is allow you to make non-NPC, non-MCEdit vanilla custom shops.
for example, you can have 3 2 64 traded in for some enchanted armour. You can even place the pressure plate 50m below the ground, in a hole, so the players cannot get their items back.
That is genius. It's like the Hopper, but with Redstone signal.
I like this idea. It brings me back to the good old "You need the Blue Key to enter" days of Doom.
