After caving a while bit, I found it unrealistic that mobs like zombies and creepers are still coming at you while you have full armour, a sword and a full health bar and they have 3 hearts left and are burning to death. My suggestion is that they run away when they have a low health count, maybe even heal when like 24 blocks away from the player. Just to make them slightly more intelligent.

I love the idea of a mob trying to flee from a fight when it's low on life.
It gives it some personality and makes you actually believe it's not some drone sitting there and firing over and over again.
Some mobs it wouldn't make sense with though, I'd exclude zombies because they're...well... zombies. They don't have a consciousness, they'll just keep attacking until they don't have anything to attack with. Skeletons on the otherhand are smart enough to use distance weapons and often get into feuds with eachother when shot by their team mates, so I would understand if they ran while weak on health.

This. I do think of zombies as mindless and reckless, in fact I think their new AI is too smart for them. I can realistically see a skeleton, spider, or enderman trying to flee - they would be smart enough to recognize that they couldn't win if they kept attacking, I also think that they should get a small buff to compensate.
Skeletons should do this. They were humans before. Not zombies. No conciousness. Not spiders. They live by instinct. Not endermen. They are too creepy. Slimes should. Witches should.
