The world of Minecraft introduces a wide variety of aboveground mobs, but only has a few mobs that are actually native to the wondrous land of the underground.
Enough of the fancy talk, let's get on with it.
The HUGE Cave Update includes lots of stuff for the underground, so if you don't feel interested yet, here's what's in this little update:
New Ores (Platinum, Greenstone, Uranium)
New Neutral Mobs (Spelunker, Torchead)
New HOSTILE Mobs (Cavelurker, Renderman, Deep)
New Generated Structures (Uranium Mines, Under-Ground Zero)
Phew, that was a lot. Here we go into the cave of ideas.
NEW ORES
Platinum-
This very rare ore has the rarity of finding the largest diamond chunk. Yep, that rare. Despite having no armor or tool/weapon use, Platinum is a vital instrument in creating Platinum Blocks... wait, it's just a rare decorative ore. Crap. Um... Yeah. (can only be mined by an iron pick or higher)
Greenstone-
Greenstone is an ore that when mined, explodes in a small radius. However, Greenstone drops Glowstone Dust after it's mined. The blast does the same damage as TNT. (diamond pick+)
Uranium-
An ore that looks like Emeralds, but when mined unleashes a deadly radioactive effect. However, you can tell if it's Uranium or Emeralds. Uranium mines about 25% slower than Emeralds. (iron pick+) Drops Uranium Dust.
BONUS- High Risk Bench
With 3 Uranium Dust and 3 Obsidian, you can craft a High Risk Bench (I know, corny name, couldn't think of anything else). This allows you to "enchant" your tools and weapons with a "poison" effect from the radioactivity. However, if used against a mob, the meat it yields will always give you a hunger effect unless it's cooked.
NEW NEUTRAL MOBS
Spelunker-
The Spelunker is a villager all decked out in caving threads. He normally hangs around abandoned mines, but he can appear anywhere below sea level. You can trade Glowstone Dust with him (he wants some light, too bad he doesn't have a crafting table) for some cool little items like Iron Boots, blah blah, etc. etc.
Torchead-
The Torchead is an obvious mix between "torch" and "head". The Torchead generates light from its head as bright as a torch and wears a black-and-red mage-looking robe and if you are carrying a Flame Charge, he will follow you like chickens do with seeds. Good for exploring caves. However, this guy is a pretty rare spawn and NEVER spawns above sea level, to take note. If you bring him above sea level he will burn like a zombie in daylight.
Cavelurker-
The Cavelurker is a large, stone-grey mob (use your imagination on what he looks like, I imagine him as like a golem thing, but I dunno) that spawns large walls of stone to block your path, confuse you, etc. The Cavelurker will also destroy any torches or Glowstone, but he does not destroy Redstone Torches, burning Furnaces, or Redstone Ore that is generating light, fire, or lava. He doesn't directly attack you, but if you're within 25 blocks of him BELOW sea level, he can cause random nausea effects. He also has a scary signature laugh. Ahhhhhh!
Renderman-
The Renderman is a grey, black-eyed version of the Enderman that spawns below sea level. The Renderman renders your tools, weapons, fists, etc. useless on him either any other mobs or blocks for 30 seconds if you look directly at him. However, you can set out a bucket of lava! That always works. Flint and Steel doesn't. The Renderman comes at you at full speed with Steve's fists damage, so overall not a HUUUUGE threat if you count out that he can make you weaker than a poisoned chicken on fire if you meet eyes.
Maybe all the Pokemon trainers are really Rendermen, and so they have to use their Pokemon to fight for them...
Deep-
The Deep is a creature so horrifyingly terrifying it doesn't give me shivers at all talking about it. The Deep only spawns in Uranium Mines or Under-Ground Zero areas because it is so FLAPJACKIN' BIG. It's as tall as two Withers stacked on top of each other and has the width of a Wither, basically. It is FLIPFLOPPIN' FAST and does damage equal to a stone sword. However, if he is within 10 or less blocks of ANY light source (that includes weird stuff like Redstone Ore and Furnaces!) he will start to lose 2 hearts every 3 seconds. He doesn't attack the light source, but instead goes head-on at YOU. Ouch.
1 Deep spawns per 100 blocks because of how ridiculously powerful this beast is.
Oh, it's black with green eyes and stone knives for fingers. sweet dreams trololololo

A huge area that consists of Obsidian and Uranium, but has a VERY rare spawn!

This is a HUGE area that has a lot of Uranium. Enough said. Pretty big, but it's about as rare as a diamond.
Wow. Nice ideas. However, I think there are things that are still lacking. The biggest problem here is that you didn't suggest many uses for the new ores.
I think the greenstone explosion's a bit too much. Maybe scale it down so it's the same as a creeper's explosion? Also, what happens if you mine it with silk touch? Does it still explode? Or does it only explode if the dust is dropped? And you mentioned that greenstone drops glowstone dust when it's mined. IMO, that should make it emit a weak light, like level 5 or 6. Or, even better, I think greenstone should have its own drop that can be used for its own purpose. Seeing as it's explosive, and (possibly) luminescent...perhaps greenstone dust could be refined/combined into an explosive projectile? Or use it to make a dim light source that repels hostile mobs? I think having it drop glowstone dust is a bit unoriginal and redundant.
I think platinum should be added to tools, and these new tools could have better enchanting rates. Maybe you could get efficiency 5 on a platinum-lined diamond pickaxe? I think its rarity should make up for the fact that you're getting efficiency 5 back.
Lastly, uranium. I feel this one's a bit tricky because you don't want to get too much into nuclear power, since that could spark some considerable controversy. I like your idea of the "high risk table", although uranium should have more uses than just a one-time thing. (BTW, I say call it an "enrichment table" since you're enriching the tools you make.) What if we made uranium dust an ingredient for a blindness potion? That might work, I think.
This is a bit of an aside, but unless you can aggravate a mob, it's passive, not neutral. I think the spelunker should be a passive mob, and maybe give the torchhead an aggro condition. Seeing as it lives underground, maybe if you mine an ore block within 8 blocks of it, it aggros you. And it has a fire aspect attack, since it's flame based.
