Instead, I'd like to be able to craft gravel.

4 cobblestone in a 2x2 = 4 gravel blocks (same as making stone brick from smoothstone)
Gravel isn't renewable and when you want it, it's not always easy to find.
yes sometimes you can get chests and chests of it, but if you're trying to make arrows (and you can't mob grind), gravel is your source.
It just makes sense we could be able to craft gravel out of such a common resource like cobble.
If you want to go in the reverse, you could (optionally) make gravel 'bakeable' in the oven, turning it back to cobblestone, but I don't really care about that.

I don't want sand to be used in the recipe. Just to crunch up cobble into gravel.
