First of all, I am not going to whine about your game because it is the coolest game I have ever player in 30+ years since I have been doing video gaming. However, There is one bit of Logic that I do not see that makes sense and I have been doing gaming for a very long time.
This is your logic on Emeralds Ores. The total number of Ores that I have found since 1.3 is a total of 3 actual Ores in the game. This means that a player can possibly find Ores of this kind is %.00003 percent and this is something I think you should focus more on because you can build one heck of a economy system that could surpass tons of other games on the market.
Buying and selling of unwanted ORES by the players should also be a focus on your game.
Please understand that I do not hate your game and this is not a rant but advice that could really improve your game. I understand how may thing emeralds is a rare thing but this is a rediculous percentage because a minecraft world is a very huge place and Emeralds should be a bit easier to find and would make better sense for the trading system you already have in the game.
This would give the player in the game a bit more option in the game as they can obtain things like Enchantment Tables without having to dig long hours in the game. Your trading system is good but Emeralds should be given an option by actually listening to the players who bought your product.

Jeb himself said that emerald ore is not the main way to gain emeralds. They are simply a rare find. The intended main way to get them is buying them from villagers.

No one from Mojang comes on this forum any more because there are too many stupid suggestions (Wooden Clubs that stun mobs for 5 seconds and cost as much as a wooden sword was one that I saw recently.) So no, you don't need to bother writing this.

About the percentage of emeralds underground,
Yes it's alittle too scarce.
However, trading from villagers also allow gaining of emeralds.
If you find a village with no villagers giving emeralds,
Kill them, leave 2, let them breed new ones.
I've never mined an Emerald Ore. I've never even see one in person. Yet I have about 80 emeralds that I got through trading. Emerald ORE is more of a vanity item (like lapis).
Most of our world was generated in 1.0, so you have to go pretty far to get new 1.4 generated content. My girlfriend took a several hour adventure yesterday and specifically targeted a 1.4 extreme hills biome (the only place where emerald ore generates) and she was able to get a hand full of emerald ore fairly quickly with her silk touch pickaxe.
