Upon seeing the title, I assume most will be thinking about the carrot on a stick. That's not what I want to discuss, though. Rather, how pigs used to be the only food source in the game. Think about how pigs are now, probably the worst food source and most useless entity in the game, excluding bats and squid.
I realize you can ride them and it can be a fun/practical way to travel, but compare them to chickens (feathers for arrows) and cows (leather for books, milk for poison). In Beta, pigs used to be the only reliable and effective way of healing yourself, but they have been nerfed since then.
Chickens (Health - 2 hearts)
- Drops 1 chicken on death
- Heals 3 food bars
- Drops 0-2 feathers on death
- Can lay an egg every 5-15 minutes
Cows(Health - 5 hearts)
- Drops 1-3 beef on death
- Heals 4 food bars
- Drops 0-2 leather on death
- Milk cow using a bucket
and finally, Pigs (Health - 5 hearts)
- Drops 1-3 pork on death
- Heals 4 food bars
- Can ride using a Carrot on a Stick
Compared to the other farm animals, pigs are generally worthless. The only thing you can really get off of them you can get off of the other 2. So, besides riding them, why create a farm for them?
TL;DR (suggestion here)
Once again reiterating that they were the first animal to actually supply food for you, I think either the drop rate of food for pigs need to be increased, or the drop rate of cows should be decreased. Alternatively, have pigs drop something other than meat, such as a low chance of dropping a carrot would also be nice, rather than having zombies drop it.
I apologize if this has been suggested before. I used the search function and couldn't find any topics quite similar to this.. or maybe I just fail at searching.
This has already been suggested since cows dropped food, mostly because cows dropped 2-4 Beef (now they drop 1-3). It also isn't required, because Pigs are far easier to feed. Why? Carrot crops drop more carrots than Wheat crops drop Wheat.

Yeah, I remember when cows dropped more than just a couple, and the nerf to them was a great step in the right direction. Breeding pigs can be easy as you stated, but I find that initially finding carrots to be a bit of a hassle. You either need to be extremely lucky with a carrot dropping, or finding a village (I have horrible luck with both, unless I go to the seed forum, hehe).
I agree with you that once you obtain the carrots, pigs can be much easier to breed. However, I find that the "cooldown" on breeding them outweighs the amount of carrots you can obtain. By the time they are good to go again, chances are you will have more wheat.
I love to debate, and I do see your point on this issue (I don't want to start an overly heated debate), but at the same time I hope you see where I am coming from. Ultimately, it is much more worth your time to simply breed cows in my opinion! :3
Pigs Drop Carrots, NPC villages create a challenge to riding pigs, apart from saddles. It is not supposed to be easier to ride them. I think what would be better is being able to tame them and they would follow you around until they attracted a monster, when it will run away and clear the monsters from around you
