A mooshroom is simply a cow that gives you more options; literally no downside to having them around, as long as you're willing to spend the time it takes to get two, or even one.
They give you mushrooms as well as stew, and work as an infinite stationary food source if you just have one bowl, as opposed to having to use your steak, which you spent wheat on. They're much easier to get food from early game, and they're equal to cows but with more options in the late game.

Of course it is. It doesn't stack.
But you would have to eventually go mining, presumably. personally I usually take a half-stack of some sort of food. Can't do that with stew, which often requires a Pre-adventure allotment of inventory space for your unstackable food. It's a good food source for within your base, of course; grab a few bowls and chow down- but when it comes to being on the go, a stackable source- even carrots- provide a better supply. It's sort of like how pre-adventure update, bread was actually the best food source for such excursions since you could stack wheat and craft it as necessary when you took damage.
I disagree that Mushroom islands should be made less rare, but I base my opinion on the exact opposite: I find them useless and pointless- nothing more than an interesting novelty with a few unique blocks. I'd be pretty annoyed if they were made more common, but only because they aren't very useful, IMO.

Jungle, because Cocoa pod/temple/ocelot/nigh infinite supply of wood/perfect place to build treehouses.
1. You can just light up a man-made platform in the middle of the ocean and not have mobs spawn and
2. You'll NEED the items hostile mobs spawn for many things, so don't get too cocky.
