I prefer emeralds. Also, the whole point of emeralds is it's not something you can get from mining (there is emerald ore but it's extremely rare and only in the game as a nice surprise).
Coins are just boring and generic. Using a gem as currency is more unique (it's been done before obviously, but it's not nearly as common as coins).
Currently you have to trade a bunch of an item to get an emerald. Instead you could trade a few items at a time for a nugget and work your way up.
I agree, I haven't found trading to be useful. Even f I'm intentionally going to a village to trade I rarely have the right items to sell, and I always try to console myself afterwards that the crap I end up with is worth expanding the trade options or making the villagers like me or something. But that's a different topic probably.

I'm mining in Extreme Hills and I'm finding about as many emeralds as diamonds. Yeah, emeralds are rare because they aren't natural in any other biome but I think that just means if you want to mine emeralds you have to be intentional about the location of the mine.
I like to refer to emeralds as rupees, because that's what they look like. Wish I could slash up grass and smash clay pots for them.
Really, I'm a big fan of the trading system in general. It offers a lot of great items through a completely different alternative route, it's not so easy to exploit now, and it's pretty "fair" -- and by that I mean, you occasionally have to take a deal that's in the villager's favor, so you can unlock more trades that are clearly in your favor. And the more you trade with a specific villager, the more trades and better offers you unlock, making him more valuable and giving you more incentive to protect him, and making trading one of the few (possibly the only?) linear "progression" systems in the game.
I get what you're saying about having smaller breakdowns (ie dollars and coins), but if you were able to essentially 'print your own currency' (particularly the bricks and iron) it would take a lot of the strategy, value and fun out of trading. You can also think about it this way: emeralds have a single use in the game, the same as the dollar in your wallet.
If anything, I wish there were more trades, including a few bartering options, like trading wheat for clay.
If anything they make a unique building block that you can use to decorate. Other than that I would like to see other potential uses like crafting armor and tools with them. Other than that, besides trading with villagers they are quite useless.

You know. RARELY. Like, a 0.1% chance. Emeralds should pop out as a joke from tall grass, and you HAVE to slash it with a sword. Just rarely as a huge joke.

well.. I remember playing the legend of zelda and I just kept cutting grass as some guy said "HERO we need your help" over 500 times xD
