I think that they should make minecraft villages where you can right click on them with a tool, and they will use that tool within a certain spot where you mark.
They could have the villagers actually farm the farms that are in their villages. They could also make mines, get ores, and get armor to defend themselves, and they could also upgrade their houses based on how much material they get.
I think this would be a great addition, and I hope you guys think so too, add some stuff, and we'll get things rolling, and they just might add this to the game!

Right clicking on villager already trigger the trade window. Also it might not make a lot of sense considering the amount of effort you go through (in short, won't it be easier just to do it yourself if you have to designate a block one by one?).

For example, a house is considered a house because there's a door with more covered space on one side than the other and a villager is nearby to trigger a check against the door. For farms, there needs to be a trigger of sort (fence gate? sign? chest?) that's not common enough to constantly be triggered by village (for example, no dirt, else the game will effectively lag out due to the constant checking by villagers).
Mine digging AI could be difficult, and in general you might not want villager accidentally tunnel their way through your building. However, for ambience, I would suggest have a new villager type call Miner who will find their way to any exposed rock and perform a dig animation on it (swing pickaxe in hand). They won't actually dig it out, but just stand there performing the motion. Then you can trade for raw ores from them.
For armor and self-defense, there's currently iron golem. Having a sort of Guard type villager would also be nice. Guards that spawn with sword/bow and armors that, at night, would stay outside and patrol (generally mean that they'll "path" around the entire village perimeter at random) and attack enemies (need better AI against creeper, perhaps ignore creeper?).

I agree with you about the right clicking. I haven't really used this feature on them, so it didn't really come to mind when first writing up the post. The whole creeper part, I think that they should be avoided, and I also think that the Miner that you suggested would work nicely.
