I think that more items should be able to be enchanted, here are a few ideas
Fishing Rod
1. More stability
Maybe when you fish the fishing rod could pull you in, this would make it require less fighting to stay out of the water
2. Durability
3. Fourtune
Carrot on a Stick
1. More Speed
2. Durability
3. Swimming
Seeds
This idea was removed due to impracticality
Hoe
1. Fertile Soil
Faster Growth
2. Fully Wet
Requires No Water
3. Fourtune
4. No Trample
TNT (suggested by RunnerX)
1. Bigger blast radius
2. Instant Explosion
3. More Damage
4. Fire Explosions
Shears (suggested by endermanvscreeper)
1. Silk Touch (more common but only works on shear items)
2. Durability
3. Fortune
Compass (suggested by RunnerX)
1. Nether Compatibility (works in nether)
2. Spawn Teleport (It can teleport you to the spawn when you right click( it also gives it durability))
3. Structure Alert, Directs you to a specified structure based on the enchantment (to direct you to a NPC Village the enchantment would be Structure NPCV, or for a abandoned mineshaft it would be Structure AbMi)
OR enchantable compasses that lead you to different structures. or work in the nether.
Maybe, the nether idea is excellent but different structures wouldn't really work well for compasses because it wouldn't tell you how to get home.

When I meant it would lead to different structures I meant this; suppose you enchant compass A ans compass B. compass A receives a desert temple finding enchantment and compass B receives a village finding enchantment. A will point towards the nearest desert temple (in a set range) and B will point to the nearest village (in a set range). One wouldn't lead to different types of structures
So if you had compass A, started at one temple, and walked towards another it would point to the first temple until it came into the range of the second temple.
Complicated I know.

That's impracticable like i cant imagine enchanting a seed but yes i do agree with the Hoe idea
And the fishing rod

Great idea enchanting shears but maybe a bit less basic, like making it able to shear cobwebs
