Forgive me if this topic has already been beaten into the ground. It seemed tedious to search the forums for previous reference, but perhaps I've taken a new approach or offered something yet unmentioned. This is my suggestion in regard to horses, which as I understand may be something to be implemented in the future perhaps. Also, I understand that the rules for posting suggestions indicate that you should post only one suggestion at a time but I have two suggestions that are directly tied to the chief suggestion and would seem unproductive to post as seperate topics.
Horses:
They would run wild on plains biomes. They stop and graze at will. When player approaches them they flee similar to ocelots. If offered an apple a horse would approach the player. The player can feed several apples and have a chance to earn their trust (meaning they pop hearts out and wait). Then, the player must use a saddle on the horse (otherwise after a short while they run off). Once saddled the horse is 'tamed' and takes on an aspect of a tamed horse:
white, black, chestnut (red/orange), dun (yellow), grey, painted (spotted) or zebra (rare).
Now the horse can be mounted. Once mounted the player would see a 'stamina bar'. The horse would respond to three levels of speed: walking, galloping (equal to player's sprint), and sprinting (faster than human sprinting). While mounted a player can steer the horse similar to a boat (pressing forward while facing a direction) or wield a bow, sword or tool etc. Jumping would cause the horse to leap distances depending upon the speed traveling. Walking jump is the same as a players walking jump, galloping jump would be the same as players sprinting jump, sprinting jump would be farther than a players sprinting jump.
While mounted a horse will automatically climb up one block (where a player would need to jump, perhaps slowing them down.)
As a player pushes a horse into a gallop or sprint their stamina would gradually decrease until they eventually slow to a walk. If stopped or dismounted a horse will graze (if grass is available) replenishing their stamina gradually. If fed a carrot, apple, potato, or melon(?) their stamina would refresh readily.
Mobs wouldnt attack the horse as the horse poses no threat to them, though they can be hurt by various things like explosions, fire, drowning, player striking them, etc. Feeding them restores health (maybe their head hangs lower when hurt similar to how a dogs tail lowers). A horse will never walk off a cliff or walk into lava unless drivin into it by the player.
Now I'm veering into futher suggestions which are related to horses....
Wheels:
Yeah, I know. But hear me out. You could craft a wheel by forming a box of wooden slabs on the crafting table. There could be other uses for wheels also, remember, wheels were one of man's first inventions!
Carts:
The only thing that seems practical would be to place a 'boat' on the crafting table and then 2 or 3 wheels below it. This would create a cart. The player can place it somewhere and by right-clicking would begin to 'pull' the cart behind them. It would act as a mobile chest. The player cannot sprint while hauling a cart. Right clicking (or being attacked) would disengage the cart, leaving it where it stood.
Now, how this would relate to horses:
Use a cart on a horse and it attaches to the horse and it begins pulling it. A horse hauling a cart could only walk or gallop (not sprint). In this manner a player could attach a cart to a horse and go far afield collecting resources and storing them in the cart. The problem is whether the horse/cart can jump or climb. Seems that it would be much more useful if they could but it's hard to picture...
Now, I'm no genious and I've tried to be concious to the dynamics of Minecraft, but maybe there's some good ideas for horse logistics and maybe the cart idea is pure crap...

Granted, it would make riding a pig rather pointless (save for the achievement of riding it off a cliff), but pigs are still a food source.
But cows are much more useful when it comes to slaughtering. They provide steak (which is equal to porkchops), and leather, which is useful.
But you don't always have cows where you are. Still, I think the pigs need to drop more meat.

This is my favorite part. A zebra would be really cool. I don't think the cart is a good idea, and you should just not be able to ride it without a saddle at all, but the rest of this looks like the best horse suggestion yet. Carts would probably be glitchy, and would they ever fall off somehow? I can't imagine a cart holding on while you're jumping over ditches.
i think that horses should be added as a replacement to pigs. if they keep pigs, then at least make them slower, therefore making horses more desirable. also- CRAFTABLE SADDLES. the cart thing sounds like a great idea, but i don't see it being a very easy thing to add in...

I picture the cart like a wooden minecart pulled by the horse.. Maybe thats lame (no pun)
If they make saddles craftable we'll run out of reasons to seek out dungeons and mineshafts!
Plus a saddle. More diversion than practical beast of burden.
Just imagine yourself galloping across the plains all decked out in armor and wielding a sword atop your mighty steed! You cry out 'hyah!' with much gusto as you fly back to your castle. A zombie appears infront of you. You curse: "damned boggarts!" and switch to your bow plugging the shambler with arrows and switching to your sword to deal a last death blow as you race by leaving a hissing creeper in your dust. With the clip clop of your horses hooves upon the cobblestone you dismount near the entrance to your keep. You offer a carrot to your horse before heading into your stronghold to roast up some beef. Tomorrow you plan to take out your work horse with it's cart to load up on resourses from the nearby mountains. EPIC

I think I heard somewhere by the devs that horses would not be added because of controlable pigs.
IMO, horses are just too common in video games. Pigs add that minecrafty flavour.
