No, not too realistic. Minecraft isn't realistic enough.
This suggestion will make Minecraft 10% more realistic.
-Endermen will drop held blocks on death.
-Sleeping in bed will restore health while depleting hunger.
-Blocks destroyed by Ender Dragon will be dropped instead of just destroyed.
-Cave spiders will spawn naturally at certain layer. (Not on surface)
-Rotten flesh will be cookable.
-Moon no longer always orbit the opposite of sun. It will orbit in different way. Daytime moon will be possible and also eclipses will be possible. Orbits every 7 and a half days.
-Water will flow through signs. Won't destroy signs though. Can be useful for underwater signs.
-Doors can be placed on transparent blocks.
-Zombies will attempt to open doors instead of breaking down doors.
-Witches, skeletons and zombie pigmen will be able to open doors. (Wooden door only)
-Held torches, redstone torch, glowstone and jack o lantern will give off light (Has no effect on mob spawning, plant growth, can be turned off.)
-Villagers will attack zombies if siege occurs. (Does 1 heart of damage to zombie)
-You will be able to collect snow by hand. No need for shovel. In real life, you can just scoop up snow with your hands.
-Torches will have 0.01% chance per 1000 ticks to cause fire if attached to flammable blocks. The fire won't spread. It only destroy the block the torch was on.
-Animation for door closing and opening.

I do agree with some things, like Endermen dropping blocks, and Opening doors for mobs. I'd have to say "no way" to torches causing fire, and orbiting moon. It would look strange the way I picture it.

Most of the things you mentioned would fit perfectly into Minecraft, but there are some issues. Underwater signs for one. Signs are very commonly used for traps and secret entrances underwater. Removing this feature will render all these structures useless. It's like updating redstone. You either break it or keep it. If DinnerBones was to fix all the useful redstone bugs, redstone would be limited in its potential much more than it is today.
Also, mobs opening doors is too damn dangerous...
I approve of pretty much all else.
I'd also like to see proper water flow for rivers without having to fill the entire river up, place a few blocks and the whole thing will flow. It annoys me the stillness of water. But, this will cause problems to all traps and other things that use the six block water flow limit...
