So, we have the Nether, we have the End. It's kind of binary. Another thing that's binary are the reasons we go there. To go to the nether, the only things of interest are strongholds, with little to no reason to go anywhere else aside to gather glowstone. The end is even more trivial, as nothing of value is there. Once the Ender Dragon is dead it becomes a whole load of nothing and empty accomplishment. So, here's my proposition: We add rare and valuable ores to these areas. Now, the ores won't be stronger than diamond; but they will have their special properties.
Ore #1- Adamantite
This is based on the ores referred to in Greek mythology (granted, translations indicate they may have been referring to diamonds) and means a material of great strength or hardness.
They would be found in the nether, never appearing in a chunk adjacent to a stronghold or starting portal. They spawn in veins of 2-4, not often concealed by other blocks. This ore can only be mined with a diamond pick, and takes a good 5 seconds to mine.
The tools made from this material would have the speed of Stone tools, they would be able to collect Iron, Redstone, Gold, and Diamond (albeit much more slowly), but they will have the durability twice as long as diamonds. The main difference between Adamantite and Diamonds is the argument of "Would I rather mine faster but waste tools, or mine slower but conserve resources?" The armour would have the potency of leather, but still have the regular Adamantine capabilities.
All the tools would be tinted green (to coincide with Greek Myth), with the armour being a vibrant green.
Ore #2- Mithril
This is of course: Based of Tolkien's Lord of the Rings material of the same name. (Keep in mind- Tolkien never patented the name; thus the reason it's used in every fantasy game in existence ever)
This material is found in stalactites underneath the end. There should also be infrequent meteorites that have this should one build away from the traditional end arena. They again can only be mined with a diamond pickaxe.
The tools made of Mithril will be lasting and efficient. The tools made of Mithril would have an ephemeral 512 uses, but mine with great ingenuity. They are unable to mine advanced blocks such as Diamonds and Redstone, but are easily enchanted. Mithril Armour has a bright silvery-white colour on the texture of Chainmail. Wearing it will allow the player to run faster (*1.5 mps with each piece of armour worn). They have the highest chance of Feather Falling, Respiration, Silk Touch, Flame, and Infinity, but nary bare more than one or two enchantments.
Should there be a huge water update, there should also be Orichalcum, a bright pink ore that will hasten speed in water, nearly always get an aqua affinity or respiration enchantment, make every attack a critical hit in Water, but will only be as strong as leather and wood.

The point of this idea is to give more context to places that seem pointless after a certain amount of time and add a few new properties and mechanics to the enchanting system. I'm never a fan of more tool types, but adamantite would strangely fit the game, but maybe have the stats of mithril. The mithril on the other hand, I don't think should be an End Ore, simply because the End is meant to be a "Boss Fight" World, not a survival world. But good ideas here.
At the very least, gold ore in the nether (or some weird nether specific way of obtaining it), after all, how do the pigmen make their weapons? There is no wood or gold to craft gold swords, but they use them....
both Mithril and Adamantite sound like you stole them from Harvest Moon.

It was derived from Adamantine which means hard or sturdy
Wolverine's claws are made from it
The gates to hell is made from it

I'm sorry to disappoint you, but HARVEST MOON is a 2003 intendo game about running a farm -__- not fighting at all....
