So, Honestly I have never liked the npc look (its the nose). Villagers need to look more Steve like (default skin). Why would the player be Steve but then have the inhabitants of Minecraft look completely different? Basically, I am suggesting a re-texture of the npc+ a different head (Steve's). NO giant nose. The witch could keep her nose though, because every stereotypical witch has a gigantic nose.
There also should be a miner in villages, along with a small town mine. Something like the mining shack in the Xbox tutorial world. Nothing fancy. maybe in the miner's shack there would be some wood or stone pickaxes, not a lot though.
Have large towns with a city-hall (or something along those lines, a small castle maybe) and walls. These towns would be a bit larger and have new villager variants such as beggars. Giving a beggar emeralds or bread will give you a small bonus like regeneration I, for like 10 seconds. Trading would be mostly the same but with a larger inventory of items for the traders.
Villagers should be able to get out swords when attacked or angry.Villagers should have maybe 1-3 archers in a town who use bows. I am not suggesting that they always carry around swords. Its just that some towns do not have golems, and how will the villagers defend against zombie sieges This would be a great way to implement the quiver since it is not in use/unobtainable. Quivers would be the only way to shoot arrows, and the max amount being 32 in a quiver. Each player can have one quiver on them at a time. Arrows not in a quiver being carried can NOT be fired. In order to shoot the arrows in the quiver the quiver should be equipped or in your hotbar.
Lastly, a new repair system used for the smithing building. the normal smithing building has a stone slab anvil for decoration that does nothing. Why not make it have an actual anvil. One like in the mcmmo plugin. However many ores/resources you used to make it, that's how many it takes to repair it, or maybe half the resources This would be done on an anvil. An anvil should probably be a harder to get item, requiring something like 4 iron blocks and some stone. So at least you can't get one right away, you will have to do some work.
I agree fully! How can your player be what it is, but the villager inhabitants be of a diffrent species? I hope what you said about villagers, and everything is at least considered to be put in the game.
I agree with this completely except for the anvil repair system... I don't see why you'd use the same amount of the material to fix a tool or item unless it's enchanted... Maybe instead use half the materials you used to make it instead? So repairing is useful for everyone, not just people that enchant items.

You ask why the villagers aren't human, but really, why would they be human?

Larger towns would be cool, but first Mojang should focus on making the villages not spawn with strange layouts and impossible-to-traverse infrastructure. If regular-sized villages can be as messed up as they are, I'd hate to see how wrong a city could go.

If Mojang wanted warrior villagers, they probably would have added them instead of Iron Golems. It's pretty clear that the Testificates aren't supposed to be violent or confrontational.
Lastly, a new repair system. One like in the mcmmo plugin. Example: A stone pickaxe is about to break. 3 cobblestone would restore it to full durability, However many ores/resources you used to make it, that's how many it takes to repair it. This would be done on an anvil. An anvil should probably be a harder to get item, requiring something like 4 iron blocks and some stone. If it takes the same amount of material to repair a tool as it would to make a new one, why not just get the two sticks and make a whole new tool?
Also, this part is entirely unrelated to the rest of your suggestion and technically makes it a wishlist (which is against the rules).
Two, different kinds of villagers.... hmm. Would they live in the same village? Steves and testifcates aren't much alike, and would seem quite weird to me to see them walking together in a town, but it is a good idea. Maybe just have different kinds of towns throughout the map with different races? I have no idea. It seems a little complicated.

Or maybe these races just aren't xenophobic or racist, and don't see anything wrong with two different peoples living within the same village.
That said, I don't agree with adding human villagers. I like that the only humans are players. I'd have no problem if another race (pigmen, etc) were added, though.

33+33+33=99
What about the other 1%? Pigmen?
If anyone wants to port/remake this, feel free to do that! Or don't. It's up to you, really.
