I think that currently in minecraft, the farm animals in the wild look really out of place. So, I suggest changing the skins to look more like wild animals, so:
Cow-ox/bull
Sheep-goat
Pig-boar
Squid are fine the way they are
Then make your own texture pack (or have someone do it for you). I don't think they need to be retexured, if they want to that should be one of the last things they do so all the bugs can get worked out.
Overall, I'd like the idea of the animals in Minecraft being more wild, but I don't think a texture alone would change that. They don't run away from you, they follow you for wheat, they don't defend themselves when attacked, and you farm them. Maybe there could be new passive/neutral mobs that were more wild?
