First of all, this would add a mob to the game, the bull(Longhorn, see edit below.). The bull would spawn with a group of cows, as long as the number of cows was above a certain number (say, around 5) In a way similar to the Iron Golem. Another way it would resemble an Iron Golem is that when one of the cows near it is attacked, the bull will attack the player, or the mob that attacks the cow. It would remain passive until you attack it or a nearby cow.
Now, Once defeated, the bull would drop leather and beef at the same rate as cows, but it would also have a chance of dropping a new item, the horn. These horns would have a number of uses.
First, Two horns and a helmet could be put in a crafting table to create a Horned Helmet. This could potentially be purely aesthetic, or it could grant extra abilities. For example, It could automatically increase the attack power of the person wearing the helm. My personal choice would be to create a new enchantment that could only be applied to the horned helm (regular helmet enchants could still be applied) That would increase the attack power of the wearer as their health decreased. Call the enchant Rage, or Berserk.
Next, The horns themselves could be enchanted. These enchantments would actually change the horns into new items, unstackable and with durability bars in the same way as tools. I have two enchantments currently in mind. First, the Hunting Horn. Say You have a few tamed wolves, but you don't want them following you around all the time, so you leave them at home. Now, say you discover an abandoned mineshaft, or a stronghold, or there are simply too many mobs for you to deal with at the moment. Blow on the Hunting horn by holding the right mouse button, and the horn will summon your wolves to you, battle ready and everything. The other enchant is called the Horn of Harvest (cause of cornucopias, get it?) This one is simpler. Go up to your farm, (wheat, pumpkins, melons, etc.) and blow the horn. The crops will be dropped, and magically drawn to you.(see edit below)
That's all I've got for Bulls so far. If anyone has any ideas, let me know.
Edit: Okay, seems people are seeing two big issues with this idea. First, is the issue with the Bull adding Gender to minecraft. Easy enough to bypass. Simply instead of calling it a bull, have it share the texture of a cow, only have it be slightly larger with longer horns, and call it "Longhorn Cow" or just "Longhorn".
The second problem people are having is with the Horn of Harvest idea. No problem. That one was just a spur of the moment thing I thought up, because of cornucopias. So I'll Nix that.
Edit 2: RoskillaHULKii had the idea that it should attack a player holding Beef in their hand, what do you think? Sounds like a good idea to me.
... i guess its cool. maybe the bulls should spawn and de-spawn like ocelots. breeding is impractical, cuz when you want to kill them, you get killed. should be passive. instead of enchanting, they should be a dog call. the harvesting thing is stupid.
o yeah and the horn would be a better drop, like a spiders spider eye and a ghasts ghast tear, dropping only 1, more rarely.

OK, to be serious, I do not like this idea. We already have cows, and cows can breed. Therefore, one of them is a bull (even though he has an udder).
So, would a better way of implementing this be to just add a cow with larger horns, and call it a Longhorn or something, instead of just coming out and saying it's a bull, thereby bypassing the gender issues?
Would they attack you if you got near them, or would they only attack you if you hit a cow? Also, how much damage do they do to you, and how do they attack you?
I'd keep them passive until you attack them or a nearby cow. The damage and method of attack are good things to think about. Personally, I'd have them lower their head and charge once, dealing 3 hearts of damage to an unarmored player. If you got too close again, it would repeat the attack, but if you stay away, it won't give chase.
Of course, that'd probably be more difficult to program. What do you think?

If you give it the meat it will stop attacking you for ten seconds then walk away. If you give it meat three times, it will become your pet bull, and have a ring around it's nostril. You can breed it with a cow to get a baby cow or baby bull, or right-click it with red wool to make it charge forward and stop after it's passed you or hits you. This could also influence a new arena: THE BULLFIGHTING ARENA. That explains itself.
APPROACH #2
You could kill it. :facepalm: :obviousfail:

Ten hearts
charge takes away 1 1/2 hearts from you
appearance is red cow with horns
drops and 1/2 the time leather or a leather chestplate

A lot of people have problems with introducing gender to minecraft, as was shown in response to my idea. I changed the idea from the male 'bull' to a genderless Longhorn Cow, or just 'Longhorn'.
Having it attack you while holding meat is a good idea though.

This is not a good idea. Bullfighting is widely considered to be an inhumane and needlessly cruel practice. Introducing it to minecraft would give the game all sorts of negative press. PETA would have a aneurysm.

Having it drop more leather may be a good idea, but I don't think dropping a leather chestplate would make sense. That sort of implies that either the cow was wearing the chestplate, or that it made the chestplate out of other cows.
I think the charge damage makes sense, but as for it's appearance and spawning, I like my ideas better. If it looks just like another cow, only with large horns, it increases the likelihood that an unsuspecting player will be surprised by the Longhorn cow.
So, if you don't mind, I'll add the meat thing to the original post.

By the way, the horn of harvest would entirely ruin the point of automatic farms.
