I think desert labyrinths would be a good suggestion for deserts. They would spawn underground, like abandoned mineshafts, but less common and more horizontal. They are sandstone, and sandstone walls generate on all sides of a 3×3 passage, making the path part of the structure 5×5 large. The labyrinth is a maze, so there will be dead ends and circles.
Bats would spawn in here commonly, and there are monster spawners common here. Inside this labyrinth is rooms and traps. Traps are mostly activated by tripwire, and are things like lava-piston traps, and arrow dispensers.
Rooms on the otherhand, are at least 10×10 in size, and range in what they look like and decoration. An example of a room would be a coliseum thing that is around 20×20 and ten blocks tall. It would have cool walls with decorative torches. Rooms have a 90% chance to have a monster spawner in them. Here are how rooms are generated: It picks a room size and type. Then it generates chests, then with or without torches, then it puts or doesnt put in a monster spawner. There might be torches in a room, but it will not stop monster spawners from spawning. Chests have medium-rare loot, rarely with a diamond or emerald. You might commonly find bones and rotten flesh, but you will probably find iron and gold.
How would you find these? Well, by mining, or by a desert temple. Desert temples, instead of a trap at the bottom and chests, would have passages to a labyrinth if it was near one. Dont worry though, there will be plenty treasure in the labyrinth.
So desert labyrinths would a dd a fun, dungeon-adventure map kind of feel. They would be optional, so anytime you want a challenge just go in one.

I dont know, really. But mybe I could expand to one or two more types of labyrinths... Maybe one jungle labyrinth.
